Mini New Potato Bites
Prep Time: 20 min
Total Time: 1 hr 20 min
Makes: 15 servings, 2 topped potato halves each
1-1/2 lb. new potatoes (about 15 potatoes)
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
2 Tbsp. BREAKSTONE'S or KNUDSEN Sour Cream
2 Tbsp. KRAFT 100% Grated Parmesan Cheese
4 slices OSCAR MAYER Bacon, cooked, crumbled
2 Tbsp. snipped fresh chives
PLACE potatoes in large saucepan; add enough water to cover. Bring to boil. Reduce heat to medium-low; cook 15 min. or until potatoes are tender.
MEANWHILE, mix cream cheese, sour cream and Parmesan cheese; cover. Refrigerate until ready to use.
DRAIN potatoes. Cool slightly. Cut potatoes in half; cut small piece from bottom of each potato half so potato lies flat. Place on serving platter. Top each potato half with 1 tsp. of the cream cheese mixture. Sprinkle with bacon and chives.

These potatoes are delicious served hot or cold.
Substitute
Substitute PHILADLEPHIA Chive & Onion Cream Cheese Spread for the regular cream cheese for added flavor.

SWISS & HAM PUFF PASTRY SQUARES
These bite-sized appetizer sandwiches are easy to make using frozen puff pastry sheets.
Preparation time: 20 min Baking time: 9 min Cooling time: 15 min
Yield: 72 appetizers
Pastry Ingredients:
1 (17 1/4-ounce) package frozen puff pastry sheets, thawed
1 egg, slightly beaten
1 tablespoon water
Poppy seed
Filling Ingredients:
1/4 pound (1 cup) slice LAND O LAKES® Deli Swiss Cheese, shredded
1 cup deli ham, finely chopped
1/2 cup mayonnaise
2 teaspoons Dijon-style mustard
1/4 cup chopped green onions
Heat oven to 400°F. Unfold pastry sheets. Using a pastry cutter or knife, cut each sheet into 1 1/2-inch squares. Place onto ungreased baking sheets.
Combine egg and water in small bowl. Brush tops of pastry squares; sprinkle with poppy seed. Bake for 9 to 13 minutes or until pastry is puffed and golden brown. Cool completely.
Combine all filling ingredients in medium bowl. Split each square horizontally with small serrated knife. Fill with about 1 teaspoon filling mixture.
TIP: Puff pastry squares can be baked ahead. Store in airtight container up to 2 days or freeze up to 2 weeks. Reheat at 350°F for 5 minutes.

This is a great appetizer and very easy and people just LOVE it!! I promise. Cook (steam) asparagus al dente (not too soft). Let it cool. Then take a chunk of Parmesan Reggiano cheese (no other kind will do - I know it's expensive, but you don't need that much - about a 2 inch by 1 inch rectangle or "hunk" will do for each piece of aspragus) and wrap the cheese around the asparagus with a thin slice of proscuitto (Italian ham). Serve chilled or at room temperature. I promise that they'll all be gone! Warm ergards.

I have a recipe that you take a club cracker and put about 1 teaspoon of grated parmeasan cheese on it and wrap it in a half a slice of raw bacon. When you have them all done put the tray in the oven at 400 for about 20 25 minutes until crisp. They are simple and taste great. I got this recipe from The Paula Deen entertaining book and they're really good.

How about an antipasto platter with all kinds of different olives or a bread bowl dip? Both are easy and can be made up ahead of time? And everybody loves cheese!

Get a chunk a liversausage. mash some bacon bits and chopped green onions into it. Mix up some creamed cheese with sour cream to make it spreadable. Shape the liversausage - I make a square. frost it with the cream cheese - sprinkle some onions and bacon bits on it. this is soooo easy, and men especially love it. serve with crackers.

Equal amounts of Velveeta and canned chili with no beans, melted in a small crockpot. Serve with tortilla chip "scoops".

well i guess you could combine the two and have my personal favarout, garlic mushrooms (which are really easy and quick to make, or cheap to buy) with a garlic or mayo dip. :)
