Baked Corn
INGREDIENTS:
2 cups whole kernel corn
1/4 cup chopped onion
1/4 cup green bell pepper, chopped
25 g margarine
2 tablespoons all-purpose flour
1 teaspoon salt
ground black pepper
3/4 cup milk
1 egg
1/3 cup cracker crumbs
1 tablespoon butter, melted ( = 15 g )
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a large skillet, saute onion and green peppers in the margarine. Using a wooden spoon, stir flour, salt, pepper and milk into the sauteed mixture. Stir corn kernels and egg into the mixture before pouring the entire concoction into an ungreased medium-size casserole dish.
Combine cracker crumbs and melted butter in a small bowl. Pour the mixture over the casserole.
Bake in a preheated 350 degrees F (175 degrees C) oven for 30 to 35 minutes.
Vegetarian Sheppard Pie
4 medium potatoes, peeled and quartered
1/2 cup potato water
1/4 teaspoon salt
1/4 teaspoon onion powder
8 ounces black beans or
1 1/2 cups garbanzo beans, cooked
1 cup frozen corn, thawed
1 cup frozen peas, thawed
1/3 cup peanut butter
1/2 cup water
paprika
Preheat oven to 350. Place potatoes in a large saucepan, and add just enough water to cover. Boil for 15-20 minutes, or until tender.
Drain potatoes, reserving liquid. Mash cooked potatoes with hot water, salt, and onion powder.
Add additional liquid if desired. Set aside. Combine beans, corn, and peas in a 9 inch pie pan. In a separate bowl, whisk together peanut butter and water, until smooth. Pour sauce evenly over vegetables. Top with mounds of mashed potatoes. Sprinkle with paprika. Bake for 30-40 minutes, or until potatoes start to brown.
Serve hot or at room temperature.

Pasta, pizza, sandwiches, salad. All without meat. There are many others. There are some products you can get that are made from vegetable protein, but look like meat. Sausages, deli slices, patties. Just take a good look at what you are buying when you do the groceries. And how is 'vegetarian meal' a contradiction of terms? It is a meal for vegetarians.

500g potatoes, boiled, peeled and diced
1 c cooked small chopped mixed vegetables - carrots, beans, peas, cauliflower
1/2 c chopped onions
1/2 c ghee
4 green chilis, slit and chopped
1/2 inch ginger, sliced finely
250g tomato, chopped
1 tsp red chili powder
1 tsp ginger garlic paste
salt to taste
5 tbsp butter
1 tsp garam masala
a bunch of fresh coriander leaves, chopped
2 tbsp lemon juice
lemon wedges for garnish
4 pao or buns, halved
Method
Heat ghee in a pan. Reserve 3 tsp chopped onions for garnish and fry the remaining till light brown. Add green chillis, ginger and tomatoes and saute over medium heat for 2-3 minutes. Reduce heat, then add the red chilli powder, mixed vegetables and potatoes.
With a metal spatula, simultaneously mash and stir for 5 minutes. While stirring, keep sprinkling the ginger garlic paste, dissolved in 6 tablespoons water. Add salt and two thirds of butter. Increase the heat and stir well.
Sprinkle garam masala, coriander leaves, lemon juice and remove from heat.
Garnish with remaining chopped onions.
Apply the remaining butter on the bun-halves, place them on a pre-heated frying pan. Fry until golden brown on both sides. Serve with the bhaji and a lemon wedge.

how about a chilli con carne without the beef mince? with a variety of beans, chilli and tomato and some capsicums This may be a bit too spicy so have a mild dish to accompany it with, such as steamed broccoli and zuccinni with olive oil and garlic, and some pita breads.
Since you say he is vegan I assume he doesn't eat milk products, but if he does a yoghurt and fruit salad for dessert, if he doesn't just the fruit salad.
Edit: I forgot steamed rice, will go well with spicy food

Try to look for Greek Recipes. Our tradition says meat once or twice a week so the rest of the week we are supposed to eat fish and a lot of vegetarian food.

ooo my mum was on a vegetable phase nd they wer al she cookd. howsa bout a fry up? just put lots of difrent vegetables in a pan nd add sum yummy sources or woteva u fancy nd fry it up in the pan :D serve it with rice or anything reli, dusnt sound lyk much but it reli is quite yummy :) or how about sweet potatoes, cooor they r one of the yummiest fings ive tried lol they r nice too :) or how about chiken fahetas without the chiken !! ayy they're always sumthin to consider :)... or try quorn, it looks and tastes like meat (i actuli thort it tasted nicer) but is made out of mushrooms or sumthin lyk dat, veri tastey :D
