If you have to use ordinary rice - try this recipe - I've gotten best results with Arborio rice (used for Risotto)

DO NOT GET THE PRE MADE RICE ( Uncle Ben's, Minute rice etc). Invest in a rice cooker and get the bags of rice, any kind of bulk rice will work, but try to find one that is not a bleached rice (removes some of the starch as well and it does not get as sticky). Can also look up an oriental store in your area and go to one of them to find the right stuff. Use the bag rice in a cooker and add just a bit more water for sticky rice at home in my recipes. Good Luck and happy sushi-ing! Oh yeah, make sure you have the bamboo rolling sheets, they make a BIG difference!

First, it does depend on the type of rice. Glutinous rice (sticky rice) is actually eaten in chunks almost like bread. For long grain - non-sticky type rice - rinse the rice in cold water and pour off the water - repeat this process until the water is relatively clear. This helps remove some of the excess starch and dust from the rice. When steaming the rice, use about 1/4 cup less of water to make up for the moisture that the rice retains from rinsing.

Sticky rice is, in many parts of Asia, the rice of the "common people". In many Asian societies, sticky rice is considered somewhat "lower class", but this comes not from the quality of the rice, but from the fact that it is usually eaten with bare hands. It is usually eaten with a series of smaller dishes consisting of sauces, curries, cooked vegetables. The typical way of eating sticky rice is to take a small lump and make it into a ball, using the fingers on your right hand.
Using the left hand is considered very impolite in some cultures here because the left-hand is used in the bathroom for cleaning oneself. The ball of rice is then dipped into your choice of sauce, curry, etc., and then eaten.
Preparation
Sticky Rice
First, you need to get the correct type of rice. You need to purchase "glutinous rice". Regular Jasmine rice or other types of regular rice will not work properly. Soak the glutinous rice in water for about 4 hours. Set up a steamer, wrap the rice in muslin, and steam for 15 minutes. Turn the muslin-wrapped rice over, and cook for an additional 15 minutes. Be careful not to over-cook the rice, or it will become quite mushy. The consistency you're looking for is slightly sticky, but not watery. The rice should hold together, but individual grains can still be easily separated.

Well, I hate to break it to you but Chinese and Japanese are different things.
Sushi is Japanese. So, if you want sticky rice (there is such a dish, called Sticky Rice or Glutinous Rice, in Chinese cuisine) you need special ingredients (Chinese sausage, special rice, shrimp, finely chopped vegetables, etc.). If you want to make sushi, you need special Japanese rice (short grain or medium grain) and Japanese rice vinegar (traditional but optional)... read the link for a How To on making sushi rice.

You have to buy the right rice. I make my own sushi and it sticks together without any problem.
Next time you are buying rice, go in the ethnic department of your grocery store and look for specific sushi rice, you will have no problem at all , and as a bonus, you will get a recipe to make your sushi!
Good luck !

Normally you don't stir the rice but in this case you do. You may have to allow a bit more water since you'll be taking the lid off a few times.
