chateaubriand for two with duchess potatoes

a white chocolate swan, atop raspberry puree, filled with chocolate mousse

This is a New England Fall dinner.
Appetizer- warm mulled cider. Add rum if desired.Cheese crisps.
Entree- Cranberry chicken-pour a mixture of whole berry sauce, Russian[ dark red] dressing and onion soup mix- with a bit of water, over your favorite chicken parts and cook for about 45 minutes at 350. Serve with brown and wild rice and a winter squash.
Dessert-Sweet potato pie with vanilla ice cream.

Entree - Beef Wellington with potatoes au gratin and asparagus with hollandaise sauce
Dessert - Creme Brulee or tirumisu
Conclusion - Espresso coffee and the liquer of your choice

every major city paper food section is a good source... or pick the local best in town and go write your own food review while dining... put it in the campus paper... they may comp the meal for you...

If salad is needed serve pieces of fresh fruit to add color to the plate Hot garlic bread sticks go great, too
