Well, I'd have to say the best vegan meal was made by my mom by accident. I replicated it pretty well by following her method that apparently her mom used as well.
My mom made a tomato vegetable dish from leftovers from the fridge. Completely random stuff. It was fantastic. I think this is what was in it, but it was the hemp oil added at the end that really made it.
My grandmother used to make casseroles from random leftovers. Apparently it was sometimes horrendous, but often fantastic. Great to use leftovers to make a new dish. I've started doing this, too.

garbanzo beans
tomato sauce from Trader Joe's
diced tomatoes, canned
green beans
few tsp of green bell pepper
zuccini
eggplant
onion
lots of garlic
a touch of Braggs amino acids

hemp oil added after cooking, since it's not good for heat.
Wow.

Anything that wasn't self-consciously vegan. Every time I try to follow a 'vegan' recipe, I end up with something utterly disgusting, like this:

http://www.bbc.co.uk/food/recipes/database/redlentilballs_2403.shtml

Cold cumin mush. It was horrid.

But every now and then I accidentally eat a vegan meal; say tabouli, some tomatoes marinated in vinegar and oil with fresh basil, roasted veg and good bread, etc. Ratatouille and gazpacho are nice, but do not, like so many tofu and lentil dishes, scream 'vegan.'

I make a great salad that is a bed of dark leafy greens topped with roasted red pepper strips, diced avocado, toasted pine nuts and fresh sage. For the dressing, I combine garlic, balsamic vinegar, maple syrup, dijon mustard, chipotle puree and liquid smoke with olive oil. This salad is always a crowd-pleaser- it's from the Rebar Cookbook.
