The 'Cordon Bleu' school here has vegetarian 'Cordon Vert' classes, but they're 1-day things with just a couple of dishes.

If I ate meat, I'd be off to their full program (or another good one) asap, but I don't -- never tasted it, not interested in doing so, so -- highly unlikely to be able to learn to cook it well, and ergo not about to pass much by way of traditional cookery classes.

Have all vegetarian chefs just cut out the meat from their classical training? Are there any schools with serious vegetarian cooking programs? Or are vegetarian chefs usually of the self-taught cowboy variety?

I am sure there are shcools that are specialized in training Vegetarian chefs.

Sadly, most go to traditional cooking schools and just live with the program they force you to cook. You have some degree of flexibility when you choose your classes, but you'll still handle some flesh. It's rather sad.

The vegetarian chef at one of Austin's trendy, upscale vegetarian restaurants is self-trained. He just took all the veggie classes he could find and went from there. There's not a lot of demand for a vegetarian chef in a traditional restaurant. You might see about getting a job in a vegetarian establishment and learning as an apprentice.
