Tofurky is a little dry, but if you are up for it, make your own seitan. It is basically just Vital Wheat Gluten with water and nutritional yeast made into a dough. You then boil it, or put it in a clay pot cooker, and you get something like Tofurky but juicier and you can make it into any shape you want when you boil it ( flat for turkey cutlets, roll it up for a roll up with stuffing later, or just a round loaf for slicing served with gravy). And all the other side dishes of mashed potatoes, green beans, glazed carrots, cranberry orange relish, maybe even a rice pilaf would also be welcomed at Thanksgiving.

I'm British but I know about Thanksgiving and that omnivores usually have a turkey dinner. I'm guessing that something along the lines of what I have for Xmas dinner would be good for a veggie Thanksgiving meal.
A lovely nut roast with all the veg. and a tomato and herb sauce (just made from heated up passata and herbs) is always enjoyable or 'Quorn tenders' /veggie sausages with vegetarian onion gravy and all your favourite veg and maybe some lovely roasted parsnips!!!

You can most of your usual favorites..just make them Veg friendly(use vegetable cooking stock or broth for cooking).

How about stuffed acorn squash? There are many different recipes for it online.

Quorn is also a great idea. The tenders and the herb and garlic cutlets are really good. Just add vegetarian gravy and you have a "meaty" entree without the cruelty.

Make everything except the turkey and mincemeat pie!

Perhaps tofu can be molded and colored with tea or something to look like a turkey..... but then again if you are vegan you probably don't want to celebrate the turkey.... how about some carrot smoothies?
