Chilled Cucumber and Avocado Soup - Recipe (link below)

Serves 4:
1 English cucumber, peeled, seeded, and chopped
1 ripe Haas avocados, pitted, peeled, and chopped
2 green onions, chopped
2 tablespoon freshly squeezed lime juice
1 cup sour cream
1 cup cold water
Sea salt and freshly ground black pepper
2 tablespoons chopped fresh cilantro leaves

This recipe requires no cooking, only a blender. You will probably have to grab a few extra things at the store, so just print out this recipe and drive over to the store.

Cucumber-Avocado Soup

Ingredients

1/2 cup of butter
1/2 cup of milk
2 cucumbers, peeled, seeded, and chopped
1 ripe avocado
1/4 cup chicken broth
2 tsp fresh lemon juice
1/4 t ground cumin, or to taste
In a large measuring cup combine butter, milk plus ice cubes to measure 1 1/2 cup total. In a blender, blend butter and milk mixture with the avocado, lemon juice, cumin, and half the cucumbers until smooth. Divide into chilled bowls and stir remaining cucumbers into each serving.

Chilled Cream Of Cucumber Soup

Amount Measure Ingredient -- Preparation Method

2 cucumbers
1 C. chopped onion
3 C. chicken broth
1 C. sour cream
4 Tbsp. parsley
1 Tsp. dill weed
salt and pepper

Peel cucumbers and remove seed. Dice. Put in saucepan
with chicken broth, onion and dill. Cook. Simmer 20 minutes.
Puree in blender. Stir in sour cream and parsley and chill
overnight. Serve in chilled soup bowls or bowls over ice.



Cold Avocado Soup

1 avocado -- mashed
1 Tbsp. lemon juice
1/8 Tsp. salt
1 1/2 Tsp. instant minced
onion or grated onion
3 Drops Tabasco sauce -- (3 to 5)
1 C. sour cream
1 Can chicken broth
crumbled bacon and minced
parsley for garnish

Combine avocado, lemon juice, salt, onion and Tabasco in
blender and blend well. Add sour cream and blend again. Add
chicken broth and blend. Chill thoroughly. Serve in chilled
soup bowls and garnish with crumbled bacon, minced parsley. Or
a nice touch is a sprig of cilantro. Serves 4 to 6

INGREDIENTS
2 cups plain low-fat yogurt
1 medium cucumber, peeled, seeded, and minced
2-3 tablespoons chopped fresh mint
3/4 teaspoon ground roasted cumin
1/4 teaspoon chili powder
Salt and freshly-ground pepper to taste

1. Beat the yogurt in a bowl with a whisk or fork until smooth. Mix with the remaining ingredients.

2. Chill until ready to serve.

Serves 4.

I am on the mailing list and knew they had soups-you can adjust the servings and it recalcs the ingredients needed

y would u wanna eat cucumber and acacado soup... now that just doesnt sound very nice at all!
