I once asked that question here, and only got a few helpful responses. But, someone did give me two pretty good ones, so here they are:
Grune Bohnen mit Dill (Grean Beans With Dill)
9 oz Frozen Cut Green Beans (1pk)
1/3 c Boiling Water
1 Vegetable Bouillon Cube
1 tsp Dillweed OR Dillseed
2 tbsp Butter
Place frozen green beans in saucepan with boiling water, bouillon cube, and dill. Cover; bring to a boil. Separate beans with a fork, reduce heat and simmer for 10 minutes or until tender. Drain. Stir in butter and serve.
Gedunstetes Weisskraut (Skillet Cabbage)
2 tbsp Vegetable Oil
3 c Cabbage; Finely Shredded
1 c Celery; Chopped
1 Small Green Pepper; Chopped
1 Small Onion; Chopped
1/2 tsp Salt
1/4 tsp Pepper
Heat the oil in a large frypan about 20 minutes before serving time. Add ingredients and cook over medium to low heat about 15 minutes. Stir often. Cover pan during the last 5 minutes of cooking time, stirring once or twice. Serve immediately. (Vegetables will be crisp.)

This is an easy very traditional German recipe for German Potato Soup- known traditionally as: Kartoffelsuppe
Potato Soup Recipe
Ingredients:
2 Potatoes; Medium
1 Onion; Medium Size
4 Celery Stalks & Leaves
2 tb Vegetable Oil
1 Bay Leaf; Small
1/2 tsp Salt
2 tbsp Butter
2 1/2 c Milk
Directions:
Peel and cube potatoes. Chop onion and celery. Saute' for 3 to 5 minutes in hot vegetable oil. In a large pot, add all of the vegetables and cover with with just enough boiling water to cover. Place bay leaf and salt in pot and boil vegetables until tender. Drain vegetables and reserve liquid. Mash vegetables into vegetable stock; add butter. Thin soup with milk as desired; heat until warm. (DO NOT boil).

German Pancakes Rote Grütze (it's like a red, weird-looking pudding made from red fruits and blackberries; it tastes good though and you can serve it with vanilla sauce) White Asparagus with Hollondaise sauce (I don't like the sauce, but maybe you do) a nice dish with flounder or herring, it's more popular in the north, where I'm from Beer Currywurst, Bratwurst or maybe Weißwurst, even though the latter is bavarian and pretty gross Hochzeitssuppe ("wedding soup", with chicken broth, meatballs, noodles, egg garnish... it's pretty good and not very hard to make) You could also make some dishes that used to be popular in East Germany, such as Soljanka and Ragout Fin. They aren't very well known in the western parts though, and look quite weird to me...

Kartoffelsalad! It is potato salad. It's very easy to make and you don't need sophisticated ingredients. Spätzle (pronounced spaetzle) is eggs, flower and water, like italian pasta, but more liquid because it has more water in it. You need some kind of strainer with big holes to make the noodles.

Their pasta stuff is called spaetzle. Traditionally made with burgundy based brown gravy. Yummy and as easy to make as a plate of spaghetti.
The cucumber salad with yogurt based sauce. To die for.
Those are simple and vegetarian. My favs anyway.
