Kimchi Stew(Kimchi tchigae)
Basic Ingredients
1/4 head of kimchi, 100g pork, 1/2 onion, 1/2 a root of green onion, 2tablespoons of chili powder, 1 tablespoon of ground garlic, salt, pepper powder, chili
Recipe
Cut kimchi into small pieces.
Prepare pork belly. Cut them into dice.
Slice onion thickly. Minced garlic and cut the green onion diagonally.
Put kimchi, pork and chili powder into a pot and add a little bit of water. Mix well so the there is no chili powder lumps.
(If you want to make the stew not so spicy, add kimchi juice instead of the chili powder and boil.)
Add water again to 4 and boil. Add onion later.
If the kimchi is cooked, add minced garlic, green onion and chilli, and boil again.
Season.

1 1/2 lbs roast (cubed)
2 garlic cloves (chopped)

3/4 cup water
2 tablespoons soy sauce
2 tablespoons sugar
2 cups cabbage kimchi
1 tablespoon sesame oil
1 tablespoon sesame seeds
2 tablespoons green onions (chopped)
3 cups cooked rice

Beef Roast Stews
In a hot skillet brown beef, turning to brown all sides.
Remove from skillet.Turn heat to medium.
In same skillet add garlic and ginger. Cook until garlic browns a bit, about 2 minutes.
Add water, soy sauce and sugar. Cook till bubbly.
Add meat back into skillet and simmer for 50 minutes.
Add Kimchi and cook another 10 minutes.
Serve over rice and garnish with sesame oil, seeds and green onions.

Method :
* Put the sesame oil in a saucepan and stir-fry the kimchi over moderate heat for 1/2 minute. Add the garlic and pork and continue to fry as the meat changes color.
* Now add the water, bring to a boil, and cook for 10 minutes. Add the scallion, bean curd, and clams if used, and simmer over low heat for 10 minutes more.
* Serve warm with rice.
* This recipe yields 4 servings.
Kimchi and Pork Soup - (Kimchi Jiege)

2cupwater
1/2lbhomemade cabbage pickle sliced
1/4lbboneless pork cut into 1/4" dice
1/8tspfreshly-ground black pepper
1xscallion sliced thin
1xfresh semi-hot green chili sliced thin,
rinsed in cold water to remove seeds
1tsptoasted sesame seeds
10xdried red chili threads as garnish
Method :
* Put the water and kimchi in a pan, bring to a boil, add the pork and simmer over low heat for 20 minutes. Add water if the liquid evaporates too quickly.
* Now add the pepper, scallions and fresh chili and cook for another 10 minutes. Remove from the heat and serve in individual bowls. Garnish each bowl with sesame seeds and chili threads.
* Serve warm with rice and favorite side dishes.
* This recipe yields 4 servings.
