Do you mean they milk a dead cow and then make cheese out of its milk?

If they milked the cow and then it died then the cheese is made from living cow's milk even though by this time, the cow has become a 'late cow' - a cow which is 'no more' - an 'X Cow'

If most cheeses are aged 10 months or so, odds are the cow who provided the milk your cheese is made of was probably sent to slaughter before the cheese hit the stores.
