I'm not a native speaker of English and this phrase reallz confuses me. Does it mean the vegetable tastes like earth (and what kind of taste is that) or something else?

Good question. "Earthy" can mean a few things. Isn't English confusing??
Basically, it could taste literally like dirt like potatoes. It can have a mild and musky flavor. Turnips are 'earthy' to me. And mushrooms. I guess something that tastes well-rounded and natural.
I hope that helps.

I looked it up on an online dictionary and it said, "rough, coarse, or plain in taste."

Well, it means just that you taste earth... It is possible with a lot of vegetables, or with wines for example. Mushrooms are also a good example of earthy flavour.

It should mean your brain cataloged grouping of odors with tastes, Smelling food cooking on the grill stimulates taste. So smelling different soils, and there are as many soil smells as land masses, should stimulate a remembered taste. Earth is soil. Earthy is soil like. Increase your knowledge,enjoyment,health safety and brain power by smelling all your fresh produce.

No, as a concept It is quite complex to explain but easy to think about.

It does not mean that the food tastes like soil (for the record I ate a bit of soil when I was little and it tasted awful !!!!)

Personally, I feel it is anything which has a taste that makes you think of that particular vegetable growing in soil. So for me it would be potatoes, carrots turnips,parsnips etc...

An earthy flavor is plain, un-decorated, simple. It also seems like it has come from the earth. For example, some eggs and some potatoes.

An earthly flavour means that it tastes pure and natural, straight from nature as it should. It's not spoilt by sugar or artifical additives. Hope this helped.

hmm, sounds like it tastes like dirt.

but they probably mean that the real taste is not masked by artificial sweeteners or pesticides.

all fresh vegetables should have an earthy flavor.
