I prefer Nikon myself. I think you will find that with a few exceptions(the number of mega-pixels) these cameras are both great cameras. Both companies have proven track records in the field of photography and both will continue to keep up with cutting edge advances. I will tell you that it is my opinion that the technology in digital cameras is changing so fast that I would not spend the extra money for the technology in the camera body(unless you are going to become a professional photographer) The digital SLR market has some great cameras out there (Nikon D70s and the D80) these both are easy to use and take great photographs. I would not step up to the D200 model I would buy the D80 and spend the money I saved in a great lens. The Lens technology is not changing nearly as fast as the cameras and the lenses out there now will be able to be used for a long time. If there is one thing you should come away from this with it is this **DO NOT skimp when it comers to buying a lens** I found a great website when I was trying to decide on the camera to purchase I will include it below. this site has lots of information about cameras and is updated often. I hope this helps and good luck with your decision

The 30D is the better camera: it has 5 FPS vs. 3, faster AF, and several other advantages. True, it has 'only' 8MP vs 10MP in the D80, but that hardly matters. Eight MP is plenty. Places like www.dpreview.com will provide all the specs at a glance.
Actually, the Nikon D80 is positioned between the Canon 400D and 30D. In turn, the Canon 30D is a step below the Nikon D200. At the moment, Canon and Nikon don't have any dSLR models that compete head to head. So the price jump between every Canon and Nikon model is completely justified.
And both brands have a great selection of lenses for roughly the same prices. You can't go wrong, either way.
Before you buy, make sure to try them both out in a camera store - the feel of a camera is an important factor, too. It's part of the reason that I went with Nikon.

Hi If you want the better of the 30D and D80 - probably the D80. Its newer and a better spec. Don't forget though price - Canon include their RAW conversion software even with the lowest priced models (400D/ 30D/ 5D)- with Nikon it is some £150 extra on top of the camera. So if you want the ability to shoot RAW Canon comes in cheaper (even for similar priced camera bodies)
However, rather than either model why not try the Canon EOS 400D body (over £250 cheaper but newer than the 30D) and go with a better lens (not the kit lens). For example the Tamron 17-50 f2.8 (got a very good review in AP this week) or better Canon lens (17-85) - will come in lower cost and better quality (IMHO).
Good luck!

Just to be me, I stopped getting into the Canon/Nikon debate. They both produce excellent images.
BTW have you looked at the new Pentax K10D ?
10 meg
Shake reduction
11pt AF
"Prime" image engine
22 bit proccessor (4.1 million color rendition vs 12 bit proccessors 4,100)
72 weather seals (neither C or N have this)
all for less then D80 (1,100 USD street) and 30D (1400 body street)
Priced $1,000 (with metal mount 18-55)

Both are good buys. It depends on you and what you are going to do with it. Go to www.stevesforums.com/forums and do your research there with people who are totally into this stuff. The first listed forum is right up your alley.
