As a cashier in a retail store, I understand the importance of getting customers through the line quickly. I will even ignore the ringing telephone if at all possible. I also enjoy small conversation with customers, and give out hugs to ones who are having a bad day.
When I was moved to another duty in the store, customers would walk the floor searching for me and ask me to stop my job and check their purchases out.
However, you are right, there are a lot of unfriendly, inconsiderate, cashiers and baggers out there who simply do not care.

My polite, but often to the point, husband actually told the the cashier (as a similar conversation was going on bt. 2 employees)
"Hang on a second, I need to grab something." While still chatting away, (I don' think she even heard him) he walked over to the nearest end-cap isle picked up whatever item was there, and pretended to look at each one with great interest. By the time she realized what was going on, everyone else in line was chuckling and she became really red in the face. Couple of people even applauded.

Makes me very angry, especially when I'm in a hurry.
In the past, I have asked for the manager, upon his arrival, I ask him to ring me up, telling him his employee has better things to do than to wait on me. The response has never failed to amuse me, the manager makes the checker bag the grocery's, closes the line and takes the employees to his office.
When I come into the store now, everyone is willing to check me out in a timely manner.
Hope this helps.

Contrary to (apparently) popular belief, cashiers aren't paid very well.
On top of that, they have several hundred people pass through their lines, each day, ALL whining, complaining and expecting to be remembered by name.
Think of it this way. After taxes, they're barely making a latte per hour.
Just be glad you don't have to have their horribly crappy job, and try to cut them a little slack.
(BTW, every customer is always in a hurry.)

Yes, especially at the grocery store when they are ringing up a bunch of stuff. I will ask they they please pay attention to what they are doing because I don't want to pay for their mistakes when they aren't paying attention
