Alright poli is made either with bleached wheat flour or refined wheat flour with a stuffing of bengal gram and jaggery/sugar.
I use Jaggery and wheat flour.
Ingredients
for puran ( filling)
2 cups of bengal gram boiled till it become soft
2 cups jaggery ( sugar) use a little more if the jaggery is less sweet,
cardomom pwd - 1/4 tsp
nutmeg pwd - a pinch
For dough
1 1/2 cup flour ( wheat or white)
a pinch of salt
2 tbsp oil or melted ghee
water to knead the dough
First boil the bengram gram dal in a pressure cooker ( faster and easier). Once cooked drain the water and use the boiled dal. In a pan add the dal and add the grated jaggery . keep stirring this mixture on a medium heat till the mixture leaves the sides of the pan and becomes thick.
Knead the dough by mixixng all the ingredients under dough and keep it aside. When the dal and jaggery mixture is still warm add cardamom and nutmeg pwd. cool it till it reaches the room temp. Remember the mixture has to be thick and not watery or else it will be difficult to make poil out of it. If you see any lumps mash it or grind it.
make round balls of the dough around 1- 11/2 in in diameter , take approx double the filling ( you may use even less the key here is to make not thick enough and not thin enough polis) roll the dough little bit and make flat disc . now place the mixture ( around double the qnty of the dough taken) in the center and close the mixture with the dough( just fold the dough ) Use a little flour for dusting your board and roll again to make polis of about 7 - 8 in diameter wide . heat a flat griddle and on a medium flame roast the polis on both sides. just flip each side only once .
The polis are ready when you see light brown spots on either sides. You can eat them hot or cold with ghee

gram dal - 200g, grated coconut - 1 cup, jaggery - 1 cup, cardomoms - 4, maida - 150g, gingelly oil - 6 tsp, ghee - 50g, kesari powder - a pinch(to get the colour)
Poornam:Boil gram-dal until half-cooked and drain the water.Add jaggery, grated coconut, cardomom and grind.Make it thick by heating and stirring in low heat for a little while. Make this into round balls.
Add a pinch of salt to maida and knead it by adding a few tsp of sesame oil. Leave this for half hour. Make gooseberry sized balls of this and pat it on a plastic sheet into round flat shape.place a ball of poornam on it, mix well and pat it again.Heat a griddle, put the poli and add a spoon of ghee around it.Turn over until both sides are cooked well.
Add a tsp of melted ghee on it and serve hot.
