No, it's not cous cous (?!) or jasmine. It is a short grain but it has a specific name that I think may start with H or D

Sushi rice is sushi rice because of the way it is cooked and what is added to it, not because it's a short grained rice.

It involves stirring and fanning the rice as you a add sweetened rice wine vinegar mixture. I've found it's easier to just buy already made sushi rice from a sushi bar than to make my own.

A short or even a medium grain rice is fine. If you're looking for a specific brand, any good rice will do, so you don't have to be married to a particular brand.

More importantly, what makes sushi rice different from regular rice is the use of a rice wine vinegar mixture (the rice wine vinegar, some sugar and salt), which is mixed in just after the rice is done cooking.

Wow, it took 17 answers before someone got the right one! Bravo...... Andrew's answer is absolutely correct. Any rice will do as long as it is mixed with rice vinegar and some sugar which gives it that sweet/sour contrast as well as gives it the sticky effect that keeps the roll together and makes it easy to work with.

Sometimes I enjoy sushi style rice by itself and east it in a bolle topped with toasted Sesame seeds. Real good!

...hon, it's actually CALLED sushi rice. It's a very short grained starchy rice that's made to stick together, making it good for SUSHI! Woo, cool concept, huh? Sticky rice is good too, but don't mistake it! It's far too sweet for sushi, tasty, but too sweet.

Oryza! THHHHATS WHAT I WAS THINKING OF!!! Lol, that's all. Mochi is the really sweet kind, sweet rice. Sorry. Lol.

Sushi rice is sushi rice. Most Japanese chefs have their own preference and technique for preparing it. Try to catch the episode of Iron Chef where they prepare sushi.
