This is one of my favorites. Make up some rice with ginger and curry in it ahead of making the vegetables because the rice takes longer to cook. I use brown rice with lot of curry and ginger powder in it. About 2 teaspoons of curry powder and 1/2 - 1 tsp of ginger.
Heat up another pan with some oil and add a can of cocunut milk. Once it is hot add a can of coconut milk, curry, ginger, bag of asian vegetables like snow peas, baby carrots, bok choy and or broccoli and a can of baby corn. Turn it up high enough so it cooks quickly. This is wetter than a classic stir fry because it has the coconut milk, but very tasty.

Another good one is a peanut curry. Peanuts with brown rice and vegetables have lots of protein. I use peanut butter for the base sauce ( you will need a few tablespoons for a pan ) and add in some peanuts
( shelled of course ) from a jar. You can add a little bit of soy sauce, but won't need a lot. This is great with broccoli and carrots.

To really eat healthy all the ingredients have got to be fresh.
The following is a very quick and easy recipe, you can add or omit anything extra you might like to add or replace the suggestions with a favourite vegetable.

1x Red Onion, roughly chopped
1x Clove of Garlic, crushed
2x Small Shallots, roughly chopped
2x Medium sized carrots, cut into thin strips (Julienne)
2x Mixed peppers, any colour you like.
5x Medium sized Mushrooms, sliced
1x Bag of Beansprouts, washed
1x Small tin of Water Chestnuts
3 Tablespoons of Soy Sauce
Salt & Pepper

Use a wok or a large deep frying pan. Prepare all the above ingredients. Heat a tablespoon of olive oil in the wok or pan, add the crushed garlic, red onion and shallots, allow to cook until soft. On a high heat add the remaining ingredients and sti-fry quickly until all vegetables are soft but a little crispy. Add the soy sauce and season to taste...Enjoy!!

Speedy Vegetable Stir- Fry
450g broccoli ......3 cloves garlic..... 2.5 cm in piece fresh ginger ......125g carrots ..... 125g snow peas .....1 yellow capsicum ....1 red capsicum ....3 tablespoons peanut oil.....2 tablespoons vegetable stock or water
125g baby corn .... 1 tablespoon oyster sauce ..... 4 spring onions/shallots ..... salt and pepper

Wash the broccoli and break up into small florets. Peel and finely chop the garlic, Peel and grate the ginger.
Peel the carrots and cut into matchsticks. Trim the snow peas, deseed and chop the capsicums.
Heat the oil in a wok until beginning to smoke. Add the garlic and the ginger and stir-fry for 1 minute
Add the broccoli, capsicums and carrots, stir-fry 5 minutes
Add the stock. Snow peas and baby corn to the wok and cook for a further 3 minutes. Stir in the oyster or soy sauce.
Serves 4

VEGETARIAN STIR FRY

Carrots
Celery
Broccoli
G reen and red peppers
Onions
Water chestnuts
Mushrooms
Garlic

Mix and add the following to the vegetables, then simmer until thickened: 1/4 cup of water; 1 teaspoon cornstarch and 1 1/2 teaspoon toasted sesame seeds. No sugar and no fat.

I'm not a vegetarian but i love fruits and vegetables. You might like to include tofu (semi-firm/firm, cut in cubes, fried in little oil then add to your stir fry). Adding chopped walnut, sesame seed at serving would add flavor.

You can try some Chinese food, they're healthy vegetables. Asians are smarter than Americans if you talking about eating healthy food.
