I tried it at a club. It was very refreshing. Not too sweet.

CUCUMBER MARTINI
Yield: 1 Serving

Ingredients:

¼ cucumber
1½ ounces Skyy Melon
½ ounce lime juice
Method:
Peel the cucumber, slice into quarters, and remove the seeds. Using a grater with small-size holes, grate ¼ of the cucumber into a mixing glass. Add remaining ingredients, shake vigorously with ice and strain into a chilled martini glass. Garnish with a cucumber slice.

what a way to get your veggies..and yes I have been a bar tender and made this ...there are other ways to make it but some are time consuming

The BEST cucumber martini ever is served at a trendy fondue resturant in Portland. In case you can't get a reservation, though, here's the recipe:

3 parts Absolute Citron vodka
1 part Cointreau or Triple Sec
ice
rimming salt
fresh muddled cucumber (to taste) and a thin slice for garnish

Optional ingredients for an amazing variation include fresh-muddled cilantro, a dash of tobasco, and fresh lemon or lime

Mix the muddled cucumber, vodka and Triple Sec in a cocktail shaker half-filled with ice; shake until you're arms fall off (or until slushy) and strain into a salt-rimmed glass. Garnish with the cucumber slice and ENJOY!!!

*Note: If you don't have a muddler, use a mortor & pestle or the blunt end of a wooden spoon

Taverna Plaka's Cucumber Martini

1 serving

1 1/4 ounces 3 Vodka (a brand of soy-distilled vodka)

3/4 ounce fresh-squeezed cucumber juice

1/4 ounce Midori

Splash of simple syrup (see note)

Ice

Cucumber slice for garnish

Rim salt

In a cocktail shaker, mix the vodka, cucumber juice, Midori, simple syrup and ice. Shake and strain into a salt-rimmed glass. Garnish with cucumber slice.

Note: For simple syrup, bring equal amounts of granulated sugar and water to a boil. Remove and cool

This is the REAL cucumber martini--

INGREDIENTS
1 ½ oz. Hendrick's Gin
¾ oz. Dry Vermouth

PREPARATION
Stir Vermouth and Hendrick's Gin over ice cubes in mixing glass. Strain into martini glass. Serve with cucumber slice.

Hendrick's gin is made with hints of coriander, juniper, citrus peel, Bulgarian rose petals -- and a curious but marvelous infusion of cucumber.

Grow the cucumber in Italy. OK, substitute the vermouth for cucumber juice but remember, shaken not stirred. Was that a vodka or gin martini? Doesn't matter after 3.

First, you have to take the cucumber for some martini lessons. That's the hard part my friend. Once you get past that, it's all down hill.
