I make the sign of the cross before and after personal prayer and the Rosary and at the beginning and end of Mass. Most people i know make the sign of the cross when it feels right to them. As to why we don't do it before and after every prayer I honestly don't know.

yes after the lords prayer catholics normally make the sign of the cross. Making the sign of the cross is supposed to prepare you for communication with god.
Also before the gospel is read a catholic is supposed to make the sign over the cross over his or her mouth and heart. Similar reasons.

The Sign of the Cross is another prayer:
I open my hand and touch my brow, and say,
"In the name of the Father"
Then I touch my heart with my hand, and say,
"and of the Son."
I touch my shoulders left and right, and say,
"and of the Holy Spirit"
I say,
"Amen."
The Sign of the Cross is
- A statement of belief in the Holy Trinity
- A statement of belief in and thanksgiving for Jesus' sacrifice on the Cross
- God blessing us
- Us Blessing God ("I will bless the Lord at all times")
- A prayer using your entire body
- A Bible quote (Matthew 28:19)

Maybe they simply forgot? The Sign of the Cross is a prayer in and of itself, and is not actually required after all prayers, though it is encouraged as a sign of our devotion to God.

Doing the sign of the cross and the use of the rosary are pagan in origin. God will not accept such worship.

There is no set rule about crossing yourself. I've even seen non-Catholics cross themselves.
