The obelisk (there is only ONE) at the Vatican represents the defeat of paganism at the hands of the Catholic Church. At the top of the St. Peter's Square Obelisk is a piece of the true cross, which quite litterally shows that Christianity is above paganism.

They are part of a sun dial, the largest in the world. The large obelisk in the center of St. Peter's square was taken from the temple of the Sun God in Alexandria Egypt. Sun worship has pagan origins all the way back to ancient Babylon. When christianity merged with paganism under the Catholic church, sun worship was incorporated with it, Thus, the change from Sabbath (Saturday) as the day of worship to Sunday, the day of the Sun God.
