I noticed a greenish color on them (uncooked russets). Does this mean they are no longer usable? Also, can you still use them once they've sprouted?

Thanks!

Green means you should get rid of them. If they sprout, they're old, but still usable. They'll just taste stale.

How do you tell a good potato from a prostitute potato? You look for the sticker that says Idaho.

They smell like rotting flesh! Just cut the green off & the same with the sprouts. Be sure to dig out the "eye" of the sprout. Even dried out potatoes will come back to life when they are boiled in water!

There are (3) distinct ways to tell when your potatoes have gone bad.

#1. When they begin to sprout (they can still be used at this point, it all depends on how long they've been sitting. If it's been over (3) weeks throw them out).

#2. If they begin to feel soft when you squeeze them, definitely a sign that their getting old and need to be thrown away.

#3. If you cut them open and their green on the inside or is they have brown routing spots on their outside.

As a rule of thumb, it's best to not keep potatoes any longer than (3) weeks without using them. Cooking rotten or stale potatoes can make you sick.

If they have a green color, just peel them and they'll be fine. As long as they are firm and don't have a bad smell, they are okay to eat, even if they've sprouted. I don't use them if they are soft, or if they have too many dark spots (rotten spots) in them. If they are really bad, they'll stink really bad, and goopy stuff will ooze out.

When they are bad, you'll know it. The whole kitchen will know it. Smells so bad. Smells like rotten fish.

Just cut off the sprouts, all is well with what you mentioned.

They're bad once their mushy (uncooked), just cut off the green and the eyes, and they'll be fine.
Good Luck!

I don't know about your particular potatoes, but green can mean that they just weren't buried deep enough while growing. Just cut that part off.

Look, potatoes are just roots; bulbous, roundish roots, when left to themselfs, they just do what roots do, and continue to grow. If your potatoes aren't smelly and squishy, cut off the offending parts, and eat away.

Potatoes turn green under fluorescent light. Just peel it off. Buy from a store where they aren't under fl. light and protect them when you get them home. No green! :)

take off the sprouts, cut off the green (ever seen a green potato chip?) and use it. don't use it if it's slimy.
