Old Fashioned Pineapple Upside Cake
INGREDIENTS
4 eggs
1/2 cup butter
1 cup packed light brown sugar
1 (20 ounce) can sliced pineapple
10 maraschino cherries, halved
1 cup sifted cake flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup white sugar
1 tablespoon butter, melted
1 teaspoon almond extract
DIRECTIONS
Preheat oven to 325 degrees F (165 degrees C).
In a 10 inch heavy skillet with a heat-resistant handle (I use a cast iron skillet), melt 1/2 cup butter or margarine over very low heat. Remove from heat, and sprinkle brown sugar evenly over pan. Arrange pineapple slices to cover bottom of skillet. Distribute cherries around pineapple; set aside.
Sift together flour, baking powder, and salt.
Separate the eggs into two bowls. In a large bowl, beat egg whites just until soft peaks form. Add granulated sugar gradually, beating well after each addition. Beat until stiff peaks form. In a small bowl, beat egg yolks at high speed until very thick and yellow. With a wire whisk or rubber scraper, using an over-and-under motion, gently fold egg yolks and flour mixture into whites until blended. Fold in 1 tablespoon melted butter or margarine and almond extract. Spread batter evenly over pineapple in skillet.
Bake for 30 to 35 minutes, or until surface springs back when gently pressed with fingertip. Loosen the edges of the cake with table knife. Cool the cake for 5 minutes before inverting onto serving plate.

i love 2 bake i have recipes for evry thing
melt stick of 1/2 stick of butter in frying pan or a pan that can be backed in the oven (im old school so i use a cast iron skillet)
HOLLA if u here me, then u take light brown sugar and make an even layer over the butter then u can use pineapple rings chunks or crushed pineapple put an even layer over top of the brown sugar this is when i would put the marischino cherries on top some time i do sometime i dont, then u can use regular boxed cake mix or if u have your own recipe u can use that sometimes i use boxed sometime go from scratch if u wnt the homemade cake recipe e-mail me pour this batter over the top and cook accordingly but the trick is to turn it out while it is still hot let it cool maybe 5 min not too long.

PINEAPPLE UPSIDE-DOWN CAKE
1/2 cup margarine (1 stick) melted
1 cup brown sugar
1/2 cup walnuts (chopped)
1 can pinneapple slices (reserve syrup)
1 jar maraschino cherries
1 cup sugar
1 cup flour
2 teaspoons baking powder
1/4 teaspoon salt
3 eggs
1/4 cup pineapple syrup
1 teaspoon vanilla
Place the butter, brown sugar and walnuts in a frying pan and melt until it boils or bubbles. A cast iron pan works well because it's heavy and will be less likely to scorch. Place pineapples in the sugar mixture. Put cherries in the center of each pineapple. Cut the slices of pineapple into halves and line the sides of the frying pan with them (standing up on edge). In a bowl, combine sugar, flour, baking powder, salt and set aside. In seperate bowl, beat eggs until fluffy. Combine eggs, pineapple syrup, vanilla and
dry ingredients; mix until smooth. Pour batter into the pan being careful not to disturb the pineapples and cherries. Bake at 350 degrees for 35-45 minutes. Remove from oven and allow to stand for a few minutes to set and loosen the edges with a butter knife. Turn it upside down onto a serving dish.
Serve while still warm.

Pineapple Upside-down cake?

Buy a yellow or or "pineapple flavored" cake mix. I like to use the juice from a the canned pineapple instead of water in the recipe. Prepare the pan (usually a 13x9 rectangle) with rings of pineapple, brown sugar, nuts (optional) and a generous sprinkling of brown sugar. You can also put maraschino cherries in the center of each pineapple. Then pour the cake batter on top. Bake according to recipe instructions. Let the cake cool a bit (but not entirely cold) and invert the pan onto a platter. Enjoy.

Upside down what? many things can be made upside down and then the downside made delicious with special topping. Internet has many good recipes for delicious meals. I share big secret. Sometimes I use Google to get new ideas for cooking and add my own ideas to recipe to make unique. Don't be afraid to try new things and show creativity. I like you for asking this question!

Cherry Upsidedown Cake
Categories: Cakes, Chocolate
Yield: 12 servings

21 oz Cherry pie filling
2 1/4 c Flour, all-purpose
1 1/2 c Sugar
3/4 c Unsweetened cocoa powder
1 1/2 ts Baking powder
3/4 ts Salt
1 1/2 c Water
1/4 c Oil
1/4 c Vinegar
1 1/2 ts Vanilla

Preparation Time: 0:45
Spread cherry pie filling over the bottom of a 9 x 13 pan.
In a large bowl stir flour with sugar, cocoa, soda, and
salt. In another bowl, combine the water, oil, vinegar and
vanilla. Add liquid to dry mix all at once. Stir just to
moisten. Pour batter evenly in the pan over the cherry
filling. Bake in a preheated 350~ oven for 30-35 minutes.
Cool 10 minutes in pan; invert onto plate and cool.



Hawaiian Upside-Down Cake

Yield: 8 servings

1/3 c Butter or margarine
1 c C & H Golden Brown Sugar
-- firmly packed
1 c Juice-pack crushed pineapple
-- (drained measure)
-- reserve juice
3/4 c Shredded coconut
4 Maraschino cherries, chopped

------------------------------------CAKE------------------------------------

3/4 c C and H Granulated Sugar
1/2 c Reserved pineapple juice
1 ts Vanilla
1 1/4 c All-purpose flour
1 ts Baking powder
1/2 ts Salt

Melt butter in 10-inch oven proof skillet. Sprinkle brown sugar evenly
over butter; then pineapple, coconut and cherries. Set aside. Beat eggs
in mixing bowl until light and thick (3 to 5 minutes). Gradually beat in
sugar. Add 1/2 cup reserved pineapple juice and vanilla. Stir in dry
ingredients until smooth. Pour over topping in 10-inch oven proof
skillet. Bake in 350 F degree oven 40 to 45 minutes. Cool 5 minutes.
Invert on serving plate. Makes one 10-inch cake. 8 servings.
