I'm learning to work with dough and trying to understand what makes dough light like a donut or dence like a bagel

Yeast. Bagel has very little yeast so does not rise much donut has more so rises more!

If the donuts are raised they proof in a box with controlled humidity and by rising, air is incorporated into them. Bagels are a different type of dough, they aren't raised, they are boiled then baked. You can also do cake type donuts which are more dense and not raised, just fried. Hope this helps.

I would say the different types of flours used, liquids added, eggs versus no egg, the way it's mixed (more air in donuts), cooking in oil versus baking/boiling....many variables.
