I don't think you can. Cream cheese has a distinct texture and flavor, the pudding does as well, but it doesn't seem like it would work for a pumpkin roll. If there was absolutely no way you could use cream cheese, do you have vanilla cake icing or whipped topping? You could use the pudding and just forgo rolling the cake, because as soon as you did, the pudding would probably be squeezed out. You could cut them straight to make pumpkin bars or something like that. Hope this helps.

Mascarpone Cheese is similar in consistency to cream cheese but doesn't have quite the same bite. You could also try a neufanchel, which is similar to cream cheese but not quite the same bite to it as well.

i think sour cream or yogurt would have the texture that is closest to the cream cheese.

What about vanilla pudding? That would still be pretty easy to roll... maybe vanilla frosting? At least it'll look similar, right?

I like mascapone cheese instead. It's creamy, but not as heavy. It is used in Tiramasou. (Italian cake)
