I prefer pecans..I always think that the walnuts have a stange kinda of not tart but not bitter well they have a stronger flavor than the pecans...The pecans have a smoother flavor...but that's just me! I would't ever say no to chocolate cake :)

Traditional German Choc. Cake is done with pecans. However, it really is a personal preference. Best advice is to use what you like. (You could also mix them)

I always found that pecans are better with the german chocalate frosting. It gives it a better flavor walnuts to me make it bitter. but it sound good.

If you do not plan on making a frosting for the cake I would top the cake with a streusel type topping. A bit of butter, flour, nuts and sugar. It will bake into the cake giving you a crunchy topping. If you don't want to do that just sprinkle the top with some sugar and you will have a crunchy top to your cake. A glaze would also taste good but most carrot cakes are pretty moist without a glaze.

Dear Schweetum: WALNUTS! Walnuts as well as almonds have an affinity with chocolate. My mouth is watering. . .shame on you! Now I have to go downstairs and tie into a Carrot cake I just bought with sour cream cheesecake-type icing!

PECANS ARE ALWAYS BETTER THAN WALNUTS. JUST DEPENDS ON THE COST. BOTH ARE GOOD.
