Flat Tofu Tacos recipe

12 ounces tofu
1/2 cup cooked brown rice or bulgur wheat
1/4 cup peanuts
1/2 cup green pepper, diced
2 cloves garlic, crushed
1/4 teaspoon chili powder
1/4 cup catsup
1/2 teaspoon salt
2 to 3 tablespoons vegetable oil
6 tortillas
Taco sauce

Garnishes
Chopped tomato
Minced onion
Shredded lettuce

Combine tofu, rice, peanuts, green pepper, garlic, chili powder, ketchup and salt in a large bowl; mash thoroughly.
Heat the oil in a skillet and fry the tortillas. Top each tortilla with your choice of garnishes. Spoon on the tofu mixture and season with taco sauce.

Italian Tofu Casserole recipe

1 pound tofu
1 tablespoon vegetable oil
1 teaspoon onion powder
1 teaspoon garlic powder
1 tablespoon parsley
2 teaspoons oregano
1 teaspoon basil
1 quart spaghetti sauce
1/2 pound noodles
1 cup Cheddar cheese, grated

Drain and mash tofu.
Heat oil in skillet. Add tofu and all spices. Mix well and stir until tofu stops steaming, about 10 minutes.
Add 1 cup spaghetti sauce and simmer 5 minutes.
Preheat oven to 350 degrees F.
Boil noodles until tender, but not soft. In a 2 quart baking dish, layer half the noodles, 1 1/2 cups spaghetti sauce, half the tofu mixture and half the cheese. Repeat, using the cheese last. Bake for about 30 minutes or until cheese melts and sauce bubbles.

Hot and Sour Soup

1/4 pound pork or chicken
1 cake bean curd, tofu
3 to 4 Chinese dried mushrooms, soaked
1 pint good chicken stock
1 Tbsp. rice wine or sherry
1 Tbsp. soy sauce
1 tsp. crushed red pepper flakes
1 tsp white pepper
1 Tbsp. vinegar
1 tsp salt
1 Tbsp. corn starch
2 Tbsp. shredded Bamboo shoots
1 egg, beaten

Thinly shred the pork, bean curd and the mushrooms. Bring the stock to a rolling boil, add the pork, bean curd and mushrooms, simmer for 2 to 3 minutes, then add wine, soy sauce, peppers, vinegar and salt. Now blend the corn starch with a little cold water to make a smooth paste, pour into the soup slowly, stirring all the time. Add bamboo shoots and beaten egg in a thin stream, stirring constantly until egg cooks. Serve as soon as the soup thickens.

This is a great recipe. Just sub veggie stock for chicken stock.

Mapo Tofu
INGREDIENTS:
Marinade for Ground Pork:
1 1/2 Tbsp tapioca starch (can substitute cornstarch)
2 tablespoons soy sauce
Other:
1/4 pound ground pork
1 pound regular tofu (medium firmness)
1 leek or 3 green onions
1/4 tsp salt
1 tsp Chinese salted black beans (fermented black beans, also called Chinese black beans), or to taste
1 Tbsp chili bean paste, or to taste
3 Tbsp stock (chicken broth)
1 Tbsp cornstarch
2 Tbsp water
2 Tbsp light soy sauce
Freshly ground Szechuan pepper
2 - 3 tablespoons oil for stir-frying, as needed
PREPARATION:
Mix marinade ingredients. Marinate pork for about 20 minutes.
Cut the tofu (bean curd) into 1/2 inch (1 cm) square cubes, and blanch (drop into boiling water) for 2 - 3 minutes. Remove from boiling water and drain.
Chop leek or green onions into short lengths.
Heat wok and add oil. When oil is ready, add the marinated pork.
Stir-fry pork until the color darkens. Add salt and stir. Add the salted black beans. Mash the beans with a cooking ladle until they blend in well with the meat. Add the chili paste, then the stock, bean curd, and leek or green onions.
Turn down the heat. Cook for 3 - 4 minutes.
While cooking, mix cornstarch, water, and soy sauce together. Add to wok and stir gently. Serve with freshly ground Szechuan pepper.

I looove this but it sounds a little gross, just try it and I think you will like it:

Cut the tofu into finger-sized pieces, then fry them in butter in a pan on the stove. While they are getting golden-brownish, sprinkle some engevita yeast on them, flip them a few times, and serve. It's really quick and tasty.

I love soft tofu with soy sauce, lemon juice, green onion and some grated ginger on top. No cooking necessary!
