yep, grated carrots, they just kind of moosh into the batter..you mostly taste the spices, good way to eat your veggies!

You betcha! Forget the pineapple, raisins and walnuts...this recipe from Better Homes & Garden is a hit every time. Also included is how to amend it for those who are wheat sensitive (gluten-free):

CARROT CAKE
(Better Homes & Garden)

2CAll purpose flour; use Bette Hagman’s GF Flour and add 1 tsp xanthan gum for gluten free
2CSugar
1tBaking powder
1tBaking soda
1tSalt
1tGround cinnamon
3CFinely shredded carrots; I use the regular grater (not the Japanese extra-fine)
1CCooking oil; I use canola usually
4Eggs

1.Grease and lightly flour a 9 x 13 pan or two 9 x 1-1/2” round pans.
2.In a large bowl (which ever mixing bowl you’ll use to mix all ingredients; make sure there is enough room because when you add the carrots, it tends to need a lot of mixing room) mix the first six ingredients (flour  cinnamon).
3.Add the next three ingredients to the flour blend and with an electric mixer, mix until combined. Then for the next 2 minutes, beat on medium speed.
4.Turn into pans.
5.Bake at 325 oF for 50-60 minutes until done (use chopstick or skewer to check if the batter sticks to the prong or not); 40 minutes for 9 x 1-1/2” round.
6.Cool pans on wire rack; remove from pans after 10 minutes if desired (for round pans).
7.Frost with cream cheese frosting

CREAM CHEESE FROSTING
(Better Homes & Garden)

3ozCream cheese
¼CButter or margarine
1tVanilla
2CPowdered sugar, sifted

Beat cream cheese and butter together until the color lightens (the butter color with lighten). Add vanilla and gradually add the powdered sugar, until well blended.

To make a lighter frosting, whip some whipping cream in a separate bowl to add to the frosting. Be careful not to add too much whipped cream because it makes the frosting too fluid. For best results, take about 1-2 heaping tablespoons of the whipping cream and hand beat it into the cream cheese mixture. This will make it easier to fold in more whipped cream into the mixture according to your taste.

Are you serious?! Too funny! Yes - Carrot Cake does taste so good it is hard to believe there is anything 'healthy' in it.

1 tablespoon water
3 tablespoons oil
1/4 cup honey
1/4 cup applesauce
1 1/2 cups self-raising flour (whole-wheat or plain)
1/4 teaspoon salt
2 tablespoons ginger powder (optional)
1/4 cup sunflower seeds (optional)

1. Chop the carrots into chunks and place the carrots and water in a bowl and cover the top with cling wrap. Place in the microwave and heat for 15 min on high.
2. Preheat the oven to 350 degrees F/180 degrees Celsius Lightly grease the bottom of two mini loaf pans or one medium loaf pan.
3. Place in a large mixing bowl and mash with a fork or potato masher. Don't worry if it's not very smooth.
4. Add the oil, honey and applesauce and mix.
5. Add the flour and salt and ginger powder. Mix until even.
6. Pour into 2 mini loaf pans or one medium loaf pan. Cooking time is similar for both, although you might have to cook for longer if using a medium loaf pan. Sprinkle sunflower seeds evenly on top.
7. Bake for 30-35 min if using two mini loaf pans, or 35-45 min if using medium size.
8. Allow to cool for a minute before turning out.

Carrots are the main ingredient. The reason they are so well disguised is because they are shredded or even grated, depending on the recipe. If grated, they blend right into the mixture and really give very little texture to the cake. If shredded, they will contribute some texture to the cake. Carrots are naturally sweet and when you combine them with sugar and spices and cream cheese topping, it is hard to recognize the carrot.

I know exactly what you mean. I would have said no but I checked my recipe book and it calls for 3 cups of finely shredded carrots. I don't think you can count it as a serving of vegetables for the day though! I really don't care for the stuff...if you are going to have the calories I say waste it on Red Robin's Mud-pie(if you haven't had it, it's to die for!), Chocolate cake, plain old Chocolate or there is a donut shop up the street from us that makes a killer apple fritter. Big chunks of apple , thick glaze on top, and the donut is actually kinda crunchy! I limit all these sweets to like 1 every three months. That is how long it takes to burn off the calories! Good Luck! Oh I forgot...Costco's cheese cake! To die for!

Yes there are really carrots in carrot cake. You can't taste them because of all the other ingredients.

Yes , they use real carrots,you don't really notice the distinct carrot taste because of all the other spices. I like carrot cake.
