You know - when the light catches the meat (like ham or pastrami) and you see a shine withs kinda rainbow like - is that harmless preservatives or is the meat going bad?

The grease in them is rising to the top...fine to eat-em!

GREAT question!
I mean that.....well I have seen it, and I feel it is the time the meat is at the end of its life...like soon.
I could be wrong?...but a smell should also be there...Not too strong, but still there....It all depends too how the meat is stored in the fridge.

All cold cuts should never be wrapped in any plastic...against it....
It all should be put in a dish, and covered with cling wrap over the top of the dish.
In a plastic container....it also is touching (the plastic) container, and cold cuts must not do that....A glass dish is best to store it...

I noticed this most on roast beef or pastrami... it's just meat grease, nothing to worry about.

I have a funny feeling that the cold cuts are going to turn into a science project soon. I would say that they are going bad.

it is the preservatives.. most all foods we eat nowadays is loaded with them.. why do you think people are living longer we are being self preserved!!
