Eclairs
(Cream Puff Paste)

1 c. water
6 tbsp. unsalted butter
1/4 tsp. Salt
1 c. sifted all-purpose flour
4 eggs

Place water, butter and salt in medium saucepan and bring to a boil. Lower the heat, add the flour all at once. Continue to cook, stirring constantly until the mixture leaves the side of the pan and forms a ball.
Remove from heat and add eggs one at a time, making sure each egg is well blended before adding the next. Preheat oven to 400 degrees.
Fill pastry bag with mixture or using spoon, put paste on cookie sheet. Lightly spray cookie sheet with Pam.

For small puffs use about 2 tsp. For eclairs make 2 to 3 inch strips, for regular cream puffs use about 2 tbsp of paste. Leave about 2 to 3 inches between to allow for spreading.
Bake 20 to 25 minutes or until puffed and golden brown. Turn off oven and leave puffs in closed oven for 10 minutes.
Fill as close to serving time as possible to avoid pastry becoming soggy. These freeze well in an airtight container. Defrost completely on rack to use.
Fill with thickened pudding, custard, chicken salad or fruit and spread thin icing, powdered sugar or glaze over tops.
Although this seems like a complicated recipe it is really easy and makes a really impressive dish to serve guests.

Mini Chocolate Eclairs

These mini treats are easy to make but yet impressive.

12 eclairs 1¼ hours 20 min prep
Change to: eclairs US Metric
Filling
1 (3 ounce) package vanilla pudding mix (not instant)
2 cups milk
Eclair
1 cup flour
2 medium eggs
1/2 cup butter
1 cup water
1/8 teaspoon salt
Frosting
12 ounces chocolate frosting (I prefer Betty Crocker's whipped)

Prepare pudding according to directions on box and let cool for at least 1 hour.
Preheat oven to 400 degrees.
Combine butter,water and salt in a sauce pan over medium heat until butter is melted and it comes to a boil.
Reduce heat to low.
Stir in flour very fast and well until mixture forms into a ball.
Put the mixture into a bowl and let cool for 5-7 minutes.
Add eggs in 1 at a time and beat well.
Cover a large baking sheet with parchment paper.
Drop mixture onto baking sheet into 12 mounds 5 inches apart.
Using a spoon, spread out each mound until it becomes a 4 x1/2 inch rectangle rounding the edges of the side to make it oval.
Bake for 35 minutes or very lightly golden.
Then cut a 1 inch slit along side of each eclair.
Reduce oven heat to 375 degrees and return them into the oven for another 10 minutes.
Put on a wire rack to cool.
Cut each eclair into half.
Spread 1 tbsp of filling on the bottom part of the eclair.
Frost tops with frosting.
Enjoy!

I don't make them, but I like them. And I make a wonderful pudding that tastes like them. Yum!
Cheater Chocolate Éclairs


This recipe makes preparing chocolate eclairs easy, and to top it all off, they taste amazing!

Serving: 12
Prep Time: 60 minutes
Cook Time: 8 minutes
Total Time: 28 minutes





1 box graham crackers
1 large box vanilla pudding mix
milk, as called for on the pudding box
1 8-ounce package cream cheese
1 container whipped topping
1 container icing




1. Mix the vanilla pudding and milk with the cream cheese until well blended and fluffy.

2. Line a 9x13 pan with graham crackers and add a layer of the pudding mixture. Then add a layer of the whipped topping, then another layer of graham crackers. Keep repeating the three layers, the last layer will be graham crackers.

3. Melt the icing. Pour over the top of the graham crackers.

4. Chill in the refrigerator for at least 2 hours, preferably over-night.

"Banana Cream Eclairs" - 16 servings

1 cup water
1/2 cup butter; cubed
1/4 cup sugar
1/2 tsp. salt
1 cup all-purpose flour
4 eggs
FILLING
2 1/2 cups heavy whipping cream
3 tbsp. sugar
1 tsp. vanilla extract
3-4 medium firm bananas
GLAZE
1/2 cup confectioners' sugar
2 tbsp. baking cocoa
2 tbsp. butter; melted
1 tsp. vanilla extract
1-2 tbsp. boiling water
1/2 cup finely chopped pecans

In large saucepan, bring water, butter, sugar and salt to a boil. Add flour all at once and stir until a smooth ball forms. Remove from heat; let stand 5 minutes. Add eggs, one at a time, beating well after each addition. Continue beating until dough is smooth and shiny.
Insert a 3/4" round tip into a pastry bag; add dough. Pipe 3" strips about 3" apart on a greased baking sheet. Bake at 400* for 25-30 minutes or until golden brown. Remove to wire racks. Immediately split puffs open; remove tops and set aside. Discard soft dough from inside. Cool puffs.
In large mixing bowl, beat cream until it begins to thicken. Add sugar and vanilla; beat until stiff peaks form. In another bowl, mash bananas; gently fold in whipped cream. Spoon into eclairs; replace tops.
In small bowl, combine the confectioners' sugar, cocoa, butter and vanilla. Add enough water to make a thin glaze. Spread over eclairs. Sprinkle with pecans. Serve immediately. Refrigerate leftovers.

I use the recipe for Cream puff's to make my puffs, which are basically flour and egg. I just shape them a little longer. When puffs are cool I stuff with whip cream, chocolate pudding or whatever! I usually just dust them with powdered sugar, but you could probably frost them with any frosting, you may have to thin it down a bit. Have Fun! Happy Eating!
