5 to 6 eggs, separated (separate when cold. Cover and let come to room temperature, about 20 minutes maximum)
1/2 to 3/4 teaspoon cream of tartar
1 cup sugar, divided
3 tablespoons water, room temperature
1 teaspoon vanilla, other extract or flavoring
1/8 to 1/2 teaspoon salt, optional
1 cup sifted, all-purpose flour (sift, then measure)
In large mixing bowl at high speed, beat egg whites with cream of tartar until foamy. Add half of the sugar, 2 tablespoons at a time, beating constantly until sugar is dissolved and whites are glossy and stand in soft peaks. Rub just a bit of meringue between thumb and forefinger to feel if sugar has dissolved.
In small mixing bowl at high speed, beat egg yolks until thick and lemon-colored, about 3 to 5 minutes. Gradually beat in remaining sugar, water, vanilla and salt (if desired) until blended.
With a sifter or sprinkle flour with a sieve over whites. Add beaten yolk mixture. Gently, but thoroughly, fold yolk mixture and flour into whites. Pour into ungreased 9x3-1/2 inch tube pan. Gently cut through batter with metal spatula or knife to get air bubbles out and to spread evenly.
Bake in preheated 350 degrees F oven until top springs back when lightly touched with finger and cake begins to pull away from sides of pan, about 35 to 45 minutes. Invert cake in pan on funnel or bottleneck. Cool completely, about 1-1/2 hours. With narrow spatula or knife, loosen cake from pan. Gently shake onto serving plate.

Hot Milk Sponge Cake
INGREDIENTS:
1 cup sifted cake flour
1 teaspoon baking powder
1/4 teaspoon salt
3 eggs
1 cup sugar
2 teaspoons lemon juice
6 tablespoons hot milk
PREPARATION:
Sift flour once, then measure. Add baking powder and salt to the flour and sift together 3 times. In a mixing bowl beat eggs for about 5 minutes, until very thick and light yellow in color. Add sugar gradually, beating constantly.
Add lemon juice. Fold in flour mixture a little at a time. Add milk, mixing quickly and blending thoroughly. Pour into an ungreased 9-inch tube cake pan. Bake at 350° for about 35 minutes, or until top springs back when touched lightly with finger. Remove from oven and invert pan for 1 hour, or until completely cooled.

i got a very easy recipe for you. it's my granmothers recipe and works everytime.
you need to have an ingredient weighing machine... otherwise this wont work.
1. take 5 eggs and weigh them.
2. take sugar, butter (non salted), flour of same weight as the eggs.
3. for five eggs you need a teaspoon of baking powder, pinch of salt and few drops of vanilla essence.
4. first beat the eggs and sugar till pale and creamy. now add butter(at room temperature). the mixture might look curdled. dont worry.
5. sift flour with salt and baking powder. gradually add this to creamy mixture.
6. lastly add essence. the batter should be very thick and mixer should leave a wavy trail behind.
7. it can be baked in 8-9" round pan at 240 degress pre-heated oven. for 50-60 mins till toothpick inserted in center comes out clean.
the best thing about this is that you can increase or decrease the ingredients according to weight of eggs.

There are bunches of recipes on the web. Just be very careful to properly separate the yolks from the eggs to make a good product. You can also purchase just egg whites and make your work easier.

The Jaffa cake is formally a cake. it is deemed to be so via fact while it is going stale it is going frustrating, while a biscuit is going gentle. it is properly a criminal definition because it grew to become mandatory for it to be legally defined as one or the different, via different tax implications for muffins and biscuits

I just finished a class that deals with all sort of cake. I know I have the recipe somewhere but I can't get it at the moment. Sorry though. why don't you just gogle it and search for it from there.
