Sugar and you are not in the astrological stars Gemini. Put down the blow torch and back away from the stove. If you're trying to make Carmel from a recipe book and it says 2 cups sugar over medium heat, you missed something, turn the page where the recipe continues, and 1 cup water, stir till desired color is achieved. OK, get the fire extinguisher and back to the stove.

I don't know how you are 'cooking sugar' on it's own. When it melts it should be a golden brown colour. If it goes black you've burned it. I've just made some treacle toffee (In England using black treacle). Ingredients 8 oz sugar, 8 oz treacle, 4 oz butter and a dash of cinnamon and almond essence.
Place all the ingredients in a pan and heat until they melt together by mixing. Boil for 10 minutes then pour into a greased baking tray and allow to cool. Just before it sets draw lines on the surface with a knife in squares. When hard break into pieces and eat.

Of course you are not making it right. The recipe, EVERY recipe, tells you do not let the sugar burn, duh. Charcoal is not supposed to be a dessert flavor. Follow a better ecpe or watch someone who knows how to work with sugar to get a betteridea of what NOT to do and how to actually work with such a delicate product.

i cook plain sugar for use in caramalizing fruit and tec ...you have to be careful only let it get light brown and then add what your going to add it sounds like and is that you cook to long...

please think about using a sugar thermometer and add a knob of unsalted butter that will help. you are burning it and you must stir with a wooden spoon watching all the while. hope this helps

it shouldn't turn black. you have over cooked it. it crystallizes and turns into a brownist syrup
