cast iron skillet.......put your oil in it and heat it up in the oven......350 degrees until it is starting to bubble......then pour your batter in. the cornbread starts out with a crusty top that way....is great.

Always use buttermilk when cooking cornbread. Regular milk makes inferior tasting cornbread.
My mother and grandmothers knew cornmeal straight from the mill, usually ground from the corn raised on family land.. If it is available, stone ground corn meal makes the best cornbread. Our generation knows mostly of the self-rising brands that come from the grocery stores.
To make good cornbread, you need a properly cured cast iron skillet.

** HERE IS THE RECIPE THAT I USE:
Cornbread
8-9 servings 35 min
1 cup all-purpose flour
1 cup yellow cornmeal
1/4 cup sugar
4 teaspoons baking powder
3/4 teaspoon salt
2 eggs
1 cup milk or buttermilk
1/4 cup cooking oil or shortening, melted, cooled
Sift together flour, cornmeal, sugar, baking powder and salt.
Add eggs, milk and oil or melted shortening. Beat until just smooth-do not overbeat.
Turn into a greased 9x9x2 inch baking pan. Bake in a 425: oven for 20-25 minutes.
Can add drained corn, bacon, finely chopped jalapeno peppers etc. for a different taste.

i've been making cornbread since i was 12 yrs old//wet 405 has a good recpie and use melted crisco or bacon grease in cast iron skillett heat it till good and hot have batter made wit butter mike and 1/4 cup of bacon grease or crisco pour into hot skillett till about 1/2 full bake at 350 20-30 min or till brown on top.... I only use 1/2 teaspoon sugar//You can find recpies on the net for all kinds of ideals for corn bread oh i put a teaspoon of flour in mine tooyou have to use a couple of eggs,buttermilk

I use plain old $0.39 Jiffy corn muffin mix, add a little melted butter, and soem canned or defrosted frozen corn kernels. It's also very delicious with creamed corn mixed in!

I use a box of Jiffy Cornbread mix and a box of the Jiffy Yellow cake mix, with buttermilk and drizzle honey on top and bake. SO GOOD, moist and sweet

No sugar! Use stone ground (coarsely ground) corn meal. Makes it so good. If you don't have a grist mill anywhere near, try a health food store.
