Actually, what we use is a pressure switch rather than a flow switch (terminology?), like http://www.tecmarkcorp.com/tecm_prod_pressure.htm
because when your hot water tap is closed, you have a high pressure standing in your water pipe, whereas once you open the tap, the pressure drops and triggers the switch.
