Well, anything he wants that could last long.Such as: a bagel, a simple salad, fruit, etc.Beside it doesn't need to be fancy. It is just a lunch. Make it simple as can be for you and enjoyable for your husband.

How about making some pasta salad? To make a break from regular sandwiches, try using pita bread, or croissants. Chicken salad with walnuts on croissants is very good-add some Alfalfa sprouts on top of the chicken salad. Pack some Ritz Crackers with Peanut Butter on them.(Just put peanut butter on one and place another one on top. Or use cheese.
Take flour tortillas and put in some lettuce, tomato, shredded chicken or whatever vegetables and meat he would like. Make a fruit salad. Chop some veggies and in a separate container, put in some Ranch dressing. For a snack, make some trail mix.. Put together Hoagie toppings-various ones wrapped separately and let him assemble it the way he wants-
One bit thing to do is just ask him what he would like.....Just for an added touch-put a little note with it -either sweet sayings or even a joke to liven up his day.
Make a grilled chicken salad.. Macaroni salad is also good.
Be careful about leftovers-especially meat. Sometimes when they are heated in a microwave, they get dried out.

Corn on the cob.
Zucchini bread/muffins.
Cheese and spinach turnovers (use ready to bake puff pastry).
Sausage rolls.
Cheese chunks, crusty bread, Bramson pickles.
Carrot, cucumber, celery sticks.
Every day, a different type of bread/rolls/focaccia.
Every day, different cold cuts and pickles.
Different fruits.
Bean fritters, polenta slices, pasta salads.
Three bean salad.
Pitas and hummus, olives.
Vegetable samosas, beignets, or tempuras.
Empanadas.
Spinach bunuelos.
Pasta pesto.
Oven roasted vegetables
Mushrooms, spinach or bacon and cheese quiches.
Tuna and noodle pies.
Any vegetable or/and chicken pies.
Alsatian onion tarts......

Many of these items could (and should be) prepared the day before.
Others could be bought ready made, once you establish a good source.
With some planning - and proper packing - there is no end of possibilities...

Does he access to a refrigerator?
try lettuce wraps- lettuce leaf, cheese, drop of mayo and chicken slices
-egg salad with crackers instead of a sandwich
-tossed salad- lettuce, cheese, carrot shreds, mandarin orange slices favoirte, cottage cheese on the side
Does he have access to a microwave?
homemade chili in a microwaveable container
homemade spaghetti
bake breast of chicken with a prebake potato or Easy Mac
chicken alfredo
If there is no frig or micro wave, a thermal container will serve the same prupose. You can get two or three sizes .
What about a dessert?
-slice of cake
-piece of pie
-pudding
-favorite candy bar once or twice a month
(no chubby hubby!)
-chewy granola bars
Getting some ideas.....

Every once in a while when I have forgotten to buy bread I'll make a tortilla wrap... you can use everything you put in a sandwich or something different (cream cheese or dressing instead of mayo/mustard). It's still "sandwich style" in eating - aka easy w/o a microwave - and a nice change.

My husband gets tired of sandwiches too!!!, sometimes changing the bread, or using a steak roll helps. I also make him burritos from leftover roast, and I make a small salad with dressing on the side. In snack baggies I put Calamatta olives, pickled beets, pickle spears, pickled okra, hard boiled egg, and most important don't forget a note that tells him how much you love him....

I think of creative ways to use leftovers. For instance, last night I made Tacos, so today I put the left over taco meat, tomatoes, onions, avacado etc over mixed greens and made him a taco salad to take today. I added some hot sauce to some rance dressing so he would have a "zesty" ranch dressing to go with the salad.

It takes a minute to come up with original ideas, but just think of what you have handy and get creative! What lucky husbands we have! hahaha

A creative Idea?
All the answers are fine but they're missing something, hhhmmm.
A $20 bill and a note that says "Meet me at ,(name of a place here), about noon and your buying, dessert will be waiting at home".
Now THAT'S creative!

Salad with chopped cheese, meat or prawns

Sausage Rolls

Scotch Eggs

Chicken Drumsticks (cooked the night before)

Try Pittas instead of bread

Bread Sticks and Veggie Sticks with Houmous

Fruit Buns or Cake as the bread substitute with savoury snacks

Nuts & Raisins

Yoghurt & Biscuits

Leftovers from last nights tea (eg cold pasta or rice to make pasta or rice salad)

Cous Cous (This is actually dead easy and you can make it in a mug with just hot water)

Cupasoup

I have to agree with the guy above me, tortialla wraps are a great change, you can put whatever you want in them, roll it and stick it with a tooth pick!
example:
1.spread cream cheese or honey mustard or other over whole tortilla
2.add (put one layer on whole tortilla)deli lunch meat or chicken breast or other
3 one layer of all that you like of these lettuce, cheese, tomatoes, sprouts, olives ,cucumbers, onions
4. roll, add 2 toothpicks ,one on each side and cut in half!!
I think he will probally love it, and remember use the ingredients he likes most add whatever you want!!
