I just made some last night! I have adapted this recipe to be a moist bar or crunchy lose granola like cereal. I eat it as cereal with milk also so it is versatile. In a 9 x 13 pan put 1/4 c veg oil(I use canola),1/4 c wheatgerm,1/3 c honey,1/3 c brown sugar,2 Tblsp. water,1/2 tsp. salt,1 tsp. vanilla.Mix well and then add 3 c oatmeal and mix well. I change up the next ingredients whenever I want a change. 1/2 c chopped peanuts,sunflower kernels,coconut flakes, almonds, raisins, dried figs,& dried cranberries.I usually put raisens and nuts into one batch. Spread it out evenly. In a preheated oven at 225 degrees, bake and stir every 15 min. It will be in clumps if you don't overstir or crumbs if you do! Store in an airtight container. BARS: Add 1/3 c water instead of 2T and add1/2 c honey instead of 1/3c. Mix well and press firmly into pan.Bake at 225 for 45 min.into squares and put in baggies or sealed plastic containers.All of the crumbs that are left in the pan are great to eat as cereal.My grandkids, kids, and neighbors all love these. Homemade Granola

4 c Rolled oats
1/4 c Sesame Seeds
2 tb Light Sesame oil
1 ts Ground Cinnamon
1/2 c Wheat Germ
1/4 c Shelled Peanuts (or soybeans
1/4 c Honey
1/2 ts Grated Nutmeg or Cardamon

Instructions

Raisins, grated coconut, nuts, or dried fruit (optional).
Preheat the oven to 350 deg F. Toast the oats, wheat germ, seeds, and legumes lightly on a baking sheet for 5-10 minutes, until slightly browned. Remove and cool. Heat the honey and oil together in a small pan; drizzle it over the dry mixture. Sprinkle with cinnamon or cardomon. Return the mixture to the baking sheet and heat in the oven for 5 minutes. Stir or turn. Bake for a few minutes more, until crispy but not too browned. Remove and cool. Add raisins, nuts, or dried fruit if desired.

Crunchy Granola with Dried Fruit:

1 cup boiling water
1/2 cup sweetened dried cranberries (such as Craisins)
1/4 cup packed brown sugar
1 (6-ounce) bag dried mixed tropical fruit
3 cups regular oats
1/2 cup sliced almonds
1/2 cup roasted sunflower kernels
1/4 cup flaked sweetened coconut
2 tablespoons nonfat dry milk
1 teaspoon ground cinnamon

Preheat oven to 300°.

Combine the first 4 ingredients in a bowl, and let stand 15 minutes. Combine oats and remaining ingredients, and stir into the dried-fruit mixture. Sprinkle oat mixture over a jelly-roll pan, and bake at 300° for 1 hour, stirring every 15 minutes. Cool granola to room temperature. Store in an airtight container.

Yield: 6 cups (serving size: 1/2 cup)
