Dilly Casserole Bread
This unusual bread is made with cottage cheese. I think you'll love the flavor combination in Dilly Casserole Bread.
INGREDIENTS:
1 package active dry yeast
1/4 C. (cup) warm water (110 to 115 degrees F.)
1 C. large curd creamed cottage cheese
2 T. (tablespoons) sugar
1 T. instant minced onion
1 T. butter
2 t. (teaspoons) dill seeds
1 t. salt
1/4 t. baking soda
1 egg
2-1/4 to 2-1/2 C. flour
PREPARATION:
Sprinkle yeast over warm water; stir to dissolve. Heat cottage cheese until lukewarm; combine in mixing bowl with sugar, onion, butter, dill seeds, salt, baking soda, egg and yeast. Add flour, a little at a time, to make a stiff batter. Beat well after each addition. Cover and let rise in warm place until doubled, 50 to 60 minutes. Stir down with 25 vigorous strokes. Turn into well-greased 1-1/2 quart round (8 inches) casserole or 8-1/2 x 4-1/2 bread pan. Cover and let rise in warm place, about 30 to 40 minutes. Preheat oven to 350 degrees F. Bake for 25 to 35 minutes. Cover with foil and bake for another 15 minutes. Brush warm crust with butter and sprinkle with salt.

2/3 cups water
2 cups low fat cottage cheese
1/2 cup scallions, minced
1 teaspoon Dill
3 cups whole wheat flour
5 cups unbleached white flour
2 packs of fast rising yeast
1 tablespoon of sugar

Directions
Mix together juice, eggs, water, cottage cheese, scallions and dill. Heat in microwave to 125-130 degrees using a thermometer. Combine whole wheat flour, 5 cup of white flour, yeast and sugar. Mix the wet and dry ingredients together.
Knead dough on work surface sprinkled with remaining flour, until the dough is smooth and elastic, about 5-8 minutes. Place the dough in bowl, cover with a towel, and rest 10 minutes. Divide the dough and place in two 5 1/ 4 x 9 1/4 inch loaf pans.
Cover with plastic wrap sprayed with non stick vegetable coating and put in a warm place for 20 minutes. Bake in preheated, 425 degree oven for 25 minutes, or until the loaves sound hollow when tapped.
Remove from loaf pans and cool on rack.

Mix everything in a mixer.
Make it in to pieces of cooky size.
Fry in a Pan with Butter on both sides till it is light brown.
Serve it with a glass of chilled Beer.
