I am looking at the "Random House Historical Dictionary of American Slang" v. 2 (H-O) pg 272

The "H" stands for IHS or IHC with the H (Greek letter eta) IHS is the epigram for Jesus (remember IHS over the Cross?)

It probably originates from a common monogram for the name of Christ "IHS" that was used for hundreds of years in churches for inscriptions and artwork. It is apparently properly derived from a contraction of the Greek name "Iesous Christos", but was commonly identified with the Latin phrase "Iesus Hominum Salvator" translated as "Jesus Savior of Men".

It is from the latin "Jesus Hominum Salvator", which is latin for "Jesus, Saviour of Men"

EDIT: Marie, the librarian, is also correct. In latin it is "Iesus Hominum Salvator" or IHS (which is over the cross). The I is the J in Jesus.
