I adore the taste of gouda so, I would serve it with wine and make a platter of gouda, grapes, apples, figs, crackers (other assorted cheeses), & crackers.
Or, you could caramelize some onions, add sliced apples, thin slices of gouda - place all in a soft tortilla and melt in the oven for a few minutes.

From Alton Brown, and that i've got made this beforehand. this is delicious. range perfect Mac and Cheese Alton Brown one million/2 pound elbow macaroni 4 tablespoons butter 2 eggs 6 oz. evaporated milk one million/2 teaspoon warm sauce one million teaspoon kosher salt sparkling black pepper 3/4 teaspoon dry mustard 10 oz. sharp cheddar, shredded In a large pot of boiling, salted water cook dinner the pasta to al dente and drain. return to the pot and soften interior the butter. Toss to coat. Whisk mutually the eggs, milk, warm sauce, salt, pepper, and mustard. Stir into the pasta and upload the cheese. Over low warmth proceed to stir for 3 minutes or until eventually creamy.

Wrap in puff pastry and bake at 350 till golden. Yum!!! And easy, too.
