Separate the seeds from pumpkin flesh and strings. Wash them well and spread them on paper towels to dry. Next spread seeds evenly over a cookie sheet. Heat them in a 375-degree oven for 20-30 minutes. raise the oven temperature to 400. Brown the seeds for five to 10 minutes until golden brown. Sprinkle with salt and serve hot or cold.

Spread a thin layer of vegetable oil on a cookie sheet. Spread the seeds out on the sheet in a single layer of seeds (no seeds on top of each other) Sprinkle with salt. Set oven to grill. Put cookie sheet in over. Watch carefully or they will burn. When the top side of seeds is very lightly browned on the edges flip the seeds over, salt again and lightly brown that side.

for approx. 1.5 cups of pumpkin seeds....
put seeds into a bowl (take out most of the chunks, some strings are okay...they add flavor)...
add 2 tsp of melted butter or olive oil
add salt to taste
spread on cookie sheet (single layer)
bake for about 20 min @ 300 degrees or until golden brown.
you can also add other seasonings, to your taste..

1) you got to find a good pumpkin. Not all pumpkin seeds are equal.
2) you got to clean them and rinse so they are nice and clean
3) sun-dry them for a couple days
4) if you need it fast - bake them for 10-15 min at 320 F

Soak the seeds in saltwater for about 45 minutes. If you want that smoky taste, splash in some liquid smoke while they are soaking and bake at 350 until they are golden brown.

I like them buttery and fast...so my favorite way to do them is in the microwave for approx. 5 min. Put in the bottom of a casserole dish with 1/4 stick of butter and salt. The dish gets really hot, so make sure to have some hot pads!
