My Grandma used to make her meatloaf with shredded potatoes instead of bread or crackers. Does anyone else do this? I can't remember if you slightly cook the potatoes or if you shred them raw and then put them in....help!

I found this recipe, hope it helps...

Hash Brown Potato Meatloaf
INGREDIENTS:
1-1/2 cups refrigerated shredded hash brown potatoes
1 onion, chopped
2 cloves garlic, minced
1 Tbsp. olive oil
3 eggs, lightly beaten
2/3 cup Italian flavored dry bread crumbs
1/3 cup ketchup
1 tsp. salt
1/4 tsp. pepper
1-1/2 lbs. lean ground beef
1/3 cup ketchup
PREPARATION:
Preheat oven to 375 degrees. Place potatoes in a large bowl and set aside. In heavy skillet over medium heat, saute onion and garlic in olive oil until tender, about 5 minutes. Add to potatoes along with eggs, bread crumbs, 1/3 cup of the ketchup, salt and pepper and mix well until thoroughly combined.
Add ground beef and mix gently just until combined.
On a broiler pan, shape meatloaf mixture into an 8 x 4-inch loaf. Spread remaining 1/3 cup ketchup over top of loaf. Bake at 375 degrees for 70-75 minutes or until center is no longer pink and instant read thermometer reads 160 degrees when inserted in center of loaf. Let stand, covered, 15 minutes before slicing. 6 servings

I never heard of it, but I'll bet it was awesome.
I am going to try it with fresh grated potatoes and the shredded carrots, and maybe put a slice or two of cheese in the center of it(make sure cheese is covered entirely with meat) I have also put a couple hard-boiled eggs in the center of it. I like to put surprises in the center. Maybe strips of bacon.

I don't. But, I would probably slightly cook the potatoes for the meatloaf.

I have made that recipe myself. Instead of slightly cooking the spuds I use instant. Betty Crocker or the Garlic or butter flavor. It turns out great. Add onion and u can even grate carrots to add a dash of color and taste. Yum Yum

Are you sure she didn't use instant? That would be the equivalent to dry bread crumbs or crackers.

mine also used shredded carrots with taters ...they are left raw....
