Each embassy has its own processing times depending on how many applications they have. If you check the website for the Canadian embassy you are applying to for the new passport it will tell you the processing time.

You can not "renew" a Canadian passport. They will cancel the old one and issue you a new one. They will return the cancelled passport to you (the old one) if you indicate on the application form that you want it returned.

All of this information is available on any Canadian Embassy or Canadian High Commission website under Consular Services.
