STEAK AND ONION SANDWICHES WITH HORSERADISH MAYONNAISE
Serve with: French fries or potato chips, and steamed broccoli.
3 tablespoons butter, divided
1 medium red onion, thinly sliced into rounds
1 12-ounce rib-eye steak, about 3/4 inch thick
1/4 cup mayonnaise
2 tablespoons prepared horseradish
2 kaiser rolls, halved horizontally, lightly toasted
1 cup arugula
Melt 2 tablespoons butter in large nonstick skillet over medium heat. Add onion; sauté until soft and lightly browned, about 5 minutes. Transfer to plate.
Add remaining 1 tablespoon butter to skillet and increase heat to medium-high. Season steak on both sides with salt and pepper. Add to skillet and cook to desired doneness, about 2 minutes per side for medium-rare. Transfer steak to work surface; cover and let stand 5 minutes.
Meanwhile, mix mayonnaise and horseradish in small bowl. Spread mixture over cut sides of rolls. Thinly slice steak. Place steak slices on roll bottoms. Top with onions and arugula, then roll tops, and serve.
Makes 2 servings.

I like bone-in Ribeyes. This is what I do and it comes out great. I marinade it in soy sauce, garlic, olive oil, Mrs.Dash garlic and herb seasoning, and a little lemon juice for a few hours. Next, I take it out the fridge for 20 minutes then heat up a screaming hot cast iron skillet. I put the steak in there and sear it on both sides to get a nice color. Then I drop the heat down, add me some sliced onions, add salt and pepper and a tad bit of water and put a lid on the skillet for a few minutes until the onions are nice and carmelized. Tastes great to me. I like my steak medium well.

Marinate in oyster sauce for 20 minutes and baste it while BBQing it. Then I like to pour A1 and Heinz 57 sauce on the plate next to each other and dip it getting both sauces on the bite.
You can get the oyster sauce at Albertson, Safeway, ETC.
Adding some wood chips to the BBQ will also add some great flavor. And oh yeah onions and mushrooms are good too but with the above recipie there is a lot of flavor. Now I'm hungry.
I use the onions and mushrooms when I'm lazy and cook it in a pan on the stove.

BROILED ITALIAN-STYLE T-BONE STEAKS
Prep Time: 10 Minutes
Cook Time: 10 to 15 Minutes
Ready In: about 25 Minutes
Makes 4 servings
Ingredients:
4 T-Bone Steaks
2 garlic cloves chopped finely
1/3 cup fresh basil
1/3 cup freshly grated Parmesan cheese
1 tbsp tomato paste
1 tbsp olive oil
Directions:
1. Preheat broiler.
2. In a medium bowl, grind the chopped garlic cloves and basil into a paste.
3. Mix in the Parmesan cheese and tomato paste; beat in olive oil.
4. Place the T-Bone Steaks on a broiling pan.
5. Broil the T-Bone steaks on one side for 4 to 5 minutes for rare, or 5 to 7 minutes for medium; turn steak and broil for an additional 2 to 3 minutes for rare or 3 to 4 minutes for medium.
6. Remove the T-Bone Steaks and spread each steak with Parmesan cheese mixture, return to broiler for an additional 1 1/2 minutes; then serve.

Philly Cheese Steak Sandwich
1. Start with good beef such as Rib Eye.
2. Shave the beef very thin so it cooks quickly and remains tender.
3. Use a fresh high quality Italian roll - Amoroso’s is a favorite.
4. Decide if you want your steak with or without fried onions.
5. Decide if you want a steak or a cheesesteak. If you elect a cheesesteak you need to decide on American cheese, provolone or the Philly favorite "cheez whiz".
6. Any add-ons? Mushrooms, peppers, pizza sauce, tomatoes? You decide. It’s your sandwich.
7. Start to cook. Sauté the onions, peppers and mushrooms until soft.
8. Fry your steak until brown but not crispy or burned. You can mix in the fried vegetables now or add them at the end.
9. If you elect American cheese or provolone place the cheese on the meat until slightly melted. If you choose Cheez Whiz just smear it on the roll.
10. Place the roll over the meat/cheese/vegetables and scoop it into the sandwich.
11. Garnish your sandwich with pizza sauce, hot or sweet peppers or pickles as you choose.
12. Enjoy your Philadelphia cheesesteak.

A large sweet onion, usually white,like a Maui or Vidallia, thick ring cut, dip into your favorite hot sauce, drop into a hot skillet with oil and butter,salt, pepper a dash of Worcestershire sauce and saute till limp. Smoother that Steak

I was taught that if you seasoned your steak right there was no need for extras. Some garlic, coures ground pepper and some seasoning salt. Let sit at least 30 minute before grilling. And at least 5 minutes on the plate after.

I use only fresh ground pepper and garlic salt on high quality steak. Grill medium rare and serve with good bottle of Cabernet.

I marinate mine overnight then grill it.
Marinade: Italian dressing, Worcestershire sauce, grill seasonings, salt & pepper.
I rub tenderizer on the steaks before I put them in the marinade.
They turn out really juicy and tender with lots of flavor. Works really well if you like your steaks medium to medium rare.

when i make steak i usually let it sit in italian dressing for a few hours then i either cook it on the stove, in the oven, or on the grill.....where ever you make it, it still tastes awsome. I am not allowed to add onions or my husband won't eat it and i pretty much do whatever i can to make him happy!!!!
