I am trying to put together some basic guidelines for staff working in the care sector. Is there a length of time recommended not to work with food at work after having had diarrhoea?

Ask your local health unit what their guidelines are. I would say 72 hours from when it stops. Want to cure Diarrhoea? drink a tablespoon of pure lemon juice.

I would say about 72 hrs. after you last BM. That way you know that what ever caused it is out of the system and others won't be susceptible to getting the bug from the sick person.

Usually it is 24 hours after your last.

Take Imodium and go back to work. Please wash your hands first. As long as your hands are clean, I see no waiting period.
