I need some ideas for meals. My problem is my boyfriend is sooo picky he won't eat anything with onions or peppers or basically any kind of vegetables.

My hubby is the same way... you can make any recipe and just leave out the onions and peppers. Also, with the vegetable thing I "sneak" them into the meal. Examples:

-- Make a meatloaf and stuff the middle of it with broccoli, mushrooms, carrots, cauliflower, spinach (any that he'll eat!) and a little cheese
-- Try a Tuna Helper and add in some frozen peas, broccoli, or green beans
-- Hamburger Helper with some tomato chunks
-- Spaghetti with meatsauce -- use a jar/can of sauce and add some spices (garlic salt, garlic, rosemary, parsley, etc) to make it tastier. For some veggies use the sauce with veggies in it!
-- Grilled Ham, Tomato, and Cheese with some sort of soup or chowder


Here is another way to deal with a "picky" eater: Tell him you are going to be experimenting with cooking and you both will have to test things out and be open to trying them after you've put all the effort in. He'll eat it because he has to and it will help him open his palate to different flavors... and you'll learn a lot about cooking!! I make this vegetable medly and we just recently started making pizza with it. Take a boboli crust or any other pizza crust. You are going to slice up some zucchini, squash, tomatoes and mushrooms, onions, different colored peppers (you can add broccoli or any other kind of veggie) combine the chopped up veggies in a pan for grill (no holes in bottom) or you can cook it on the stove. mix in some extra virgin olive oil so it does not stick and some italian dressing and if you choose you can add some spices. Cook thouroughly on grill or stove until veggies are soft. Take your pie crust and brush some extra virgin olive oil on it, put veggies over the pizza and bake it as per the pie crust directions. You can add cheese too if you wish. It is a big favorite in my house.

Ouch! If he wants a steak, tell him it's "fend for yourself night".
My husband's picky too. Like no chicken, no this, no that. He won't even eat pasta that's not spaghetti! I'm like, it's all the same!

So if you're the one in charge of cooking, make a great dish, enjoy it and say make whatever you want. Don't be a slave and give up your favorite dishes. And you never know, he might try a bite of whatever you make!

you can disguise onions by chopping them finely sorry i have no help for peppers and other veggies

smother some chicken breasts in cream of mushroom soup and stick it in the oven until the chicken is done. goes great with rice.
