This actually is based on a true story. In old England a young scholar was reading a book under a tree and eating an apple when a wild boar (pig) charged him. He threw the book and the apple at the boar to stop from being dinner himself and the boar got the apple in his mouth and choked. The cook then took the boar as is and roasted it...apple and all.... and a new tradition was begun.

Back when roasting whole pigs were commonplace, the apple was used to add flavor and for show. However, nowadays in modern society when everything must be aesthetically pleasing, often a wooden block is placed in the mouth during roasting, to be replaced with a shiny apple before presentation.

The pig is not actually roasted with the apple in the mouth, it would burn and dissipate far before the pig was cooked, also it would be a difficult task to keep it there anyway even if you used poultry string. It is placed there after cooking solely as decoration.

The apple doesn't go in the porky's mouth until it is cooked and on a huge platter ready for eating. The mouth was kept open to let out steam.... and apples and cider were the traditional accompaniment for pork. So it seems sensible to use one as a wedge for its mouth!!!

i have no idea but once i was in prague and we didnt have much money so stayed on this camp site on an island in the middle of the lake that runs through the city....one night the was a party at the bottom of the island in the camp site next to ours, so me and my friend walked over, as we got closer there where all these people in and outside the bar absolutley off their faces dancing like hippies in woodstock (hands in air, barefoot) as i looked they where roasting a pig !!! As we walkied in the bar...this is no jke..everyone stared, we walked up to the bar and they had pulp fiction soundtrack playing...just as we got to the bar the barman walked towards me and an extract from the film (where Samuel L.Jackson recites the bible passgae and shoots the gun) was played as loud as possible making it sound like gunshots where going off all round the bar!!!! Scariest ******* thing ever!! Baring in mind we where on the middle of a bloody lake!!!! Good memory though, they ended up getting us drunk on some wierd shots!!

I would assume it was for flavoring and show. Much like adding herbs and such to the inside of chickens when roasting.
I could be wrong though.

I heard that it was used to absorb some of the grease. I would think you would need a whole lotta apples for that though.
