Not just nuns. It's not called a wedding ring. There is no marriage ceremony. It's a celibacy ring. I wear one. It's a sign of our commitment to Christ.
Those who profess the "evangelical counsels" - that is poverty, chastity and obedience - can (if they wish) wear a band. Mine has a line from Song of Songs in Latin. Ego dilecto meo, delectus meus est. In Hebrew it is "Ani le dodi, ve dodi li." It means "I am my beloved's and my beloved is mine."
Beloved, you see, we do consider him our Divine Spouse. Not in the "let's get jiggy" sense, but in the "I am reserved only for you." sense.

I have never seen a nun wear a wedding ring. She is the Bride of Christ, and her habit is her proof. I do know that there is a branch of Lay-nuns (nuns who do not belong to a particular group) who have a personal wedding ceremony where they take their vows and wear a ring, and live their life as they would have outside of the order of nuns. Those women never marry for they take their vows seriously, they are married to Christ. This is an option for women who want to be a nun, but not live as a nun (though they do take the three vows of chastety, poverty and obediance)

Yes. They exemplify the belief that the Church is The Bride of Christ. They are to totally represent the Church. This idea was twisted slightly after some people took Vatican II's recommendations and twisted them as well. There is a rapidly growing number of REAL nuns today again. Just like the priesthood the numbers are coming back with a little more of an Orthodox outlook.

Yes they wear rings, they are committed to Jesus, I wouldn't call it married. I've seen priests wear them too

Some do.
And contrary to the common understanding, all of us, both male and female, who belong to God's church, are betrothed (engaged) to him.
The wedding feast is mentioned in the Book of Revelation.
