This is a restricted shot. Less water is allowed to come through the coffee grounds but the shot should take the same amount of time as a normal pull. This is approximately a .75 ounce pull.

well..here in Italy the "espresso" is a small quantity of coffee, you can have a short espresso (very strong) and a long espresso (the average quantity is at the half of one small cup..

ristretto i think. you make it by stopping the espresso machine earlier than usual because the initial flow contains more espresso than later, where there's more water in the flow. so you stop it while the espresso is more concentrated.
