I stayed at a Bed & Breakfast with my husband a few years ago and we were served 'popped eggs'. The best I can describe it was eggs, mixed with cream of wheat and other ingredients, then baked and served with either salsa or syrup. It was SOOO good, the consistency wasn't like quiche--the look of it almost reminded me of cornbread. Does anyone have a recipe for this?

that was not cream of wheat it was grits it looks similar what you had was nothing more than grits with eggs beaten added with butter and baked in the oven...some people let it get cold and slice and fry it.....serve with syrup or molasses.....

I found a great site that has tons of Cream of Wheat Recipes. If the following (which I copied from the site) isn't it, there are tons more...it's bound to be there. Good Luck!

CREAM OF WHEAT CASSEROLE:

WOW! I don't LIKE cream of wheat, but this is amazing! Super side dish when you're bored w/ potatoes, OR great for breakfast - texture similar to grits! Give it a try! My kids LOVE this!
