Can I make this great pie w/ a graham cracker crust instead of the usual flaky crust?

My son ONLY eats pie if it's in a graham cracker crust(cheesecake included!)...

Can this be done?...and done perfectly?...and W/OUT turning it into a cheesecake itself?

Unless a pumpkin cheesecake pie can be made as well...

Please help...thanks

The answer to both is YES. I've made pumpkin pie with cookie crust (I use ginger snaps) and graham cracker crust would work fine.

Pumpkin cheesecake is amazing. How about this one, with a homemade graham cracker crust (I might skip the bourbon).

Check this site for other great pumpkin cheesecake recipes, too. Also, have you ever tried a pumpkin chiffon pie? I made this one last year:

To make the graham cracker crust - just crush a box of the graham crackers in a plastic zip loc bag, then mix with 1-2 bars of melted butter. This mixture you can spread onto the mold or dish you will use to bake your pumpkin pie. Its important that you bake the crust for 10 min on 250-300 degree oven before pouring the pumpkin pie mixture and baking completely.
This crust is also great with cheesecakes and key lime pies

Pumpkin cheesecake has been made before, I personally like it.

Here are some recipes:

Pumpkin Cheesecake
Adapted from "Cheesecake Madness" by John J. Segreto
Ari Rapkin

Crust
1/2 cup gingersnap crumbs

Filling
2 lbs cream cheese, softened
1 1/2 cups granulated sugar
1/3 cup all-purpose flour, sifted
1 1/2 tsp ground cinnamon
1 tsp grated nutmeg
1 tsp ground cloves
1/4 tsp allspice
1/8 tsp salt
6 eggs
2 cups pumpkin puree

Topping
1 cup heavy cream
1/2 cup chopped pecans

Sprinkle the gingersnap crumbs onto the bottom and sides of a well-buttered 9-inch springform pan. Chill until ready for filling.
In a large bowl, beat the cream cheese, sugar, flour, cinnamon, nutmeg, cloves, allspice, salt, and eggs until smooth. Add the pumpkin puree and continue to beat until very smooth. Pour the mixture into the chilled springform pan and bake in a preheated 325-degree oven for 1 1/2 hours. Turn off the oven and let the cake stand in the open oven for 30 minutes. Transfer to a wire rack and let cool completely.

Carefully remove the sides of the springform pan. In a chilled bowl, whip the heavy cream and spread it over the top of the cake. Sprinkle the chopped pecans on top of the whipped cream. Transfer the cake to a serving dish and serve.

My grandmother used to make pies with graham cracker crusts, never pumpkin pie because she made her own flaky crust with that, but other pies survived the graham cracker crust and were hits.

It might be trial and error the first time, but it seems like it shouldn't be too hard to get it to come out right.

Good luck

I would think it would work okay... I'd probably suggest cooking the crust alone first. It may get a soggier bottom than desired....
