If the chops are fried, I always have rice with gravy
If they are baked, then I would go with potatoes or stuffing
If they are grilled, then I would go with a salad and maybe corn on the cob or baked beans too.

Any starch - potato, rice, pasta, noodles. Also a veggie - corn and peas work well. Try to add a homemade apple compote - get a couple of good quality apples, peel and chop into dice - add a little water or white wine to a sauce pot cook the apple in the liquid with a little salt, pepper, cinnamon and nutmeg. As the apples start to break up add raisins. Don't let the apple mixture get too mushy the tactile experience will be divine. Enjoy!!!

Whenever I make pork chops, I love to have them with Fried potatoes/onions and green beans. Also, try homemade ranch with the potatoes(as a dipping sauce) and pork chops. You'll be surprised how good it is together!!

Smashed potatoes and sauerkraut or roasted brussels sprouts. OR, here's one I like:
Pork Chops, Apples & Pierogies
8 frozen potato and onion pierogies
2 bone-in pork loin chops (3/4 inch thick)
1/2 teaspoon salt, divided
1/2 teaspoon pepper, divided
4 tablespoons butter, divided
1 medium sweet onion, sliced and separated into rings1 medium Golden Delicious apple, cut into 1/4-inch slices
1/4 cup sugar
1/4 cup cider vinegar
Cook pierogies according to package directions. Meanwhile, sprinkle pork chops with 1/4 teaspoon salt and 1/4 teaspoon pepper. In a large skillet, cook chops in 2 tablespoons butter over medium heat until juices run clear; remove and keep warm.
In the same skillet, saute onion in remaining butter for 3 minutes. Add apple; saute until almost tender. Stir in the sugar, vinegar, and remaining salt and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Drain pierogies. Add pork chops and pierogies to skillet; stir to coat. Yield: 2 servings.

O gratin
Shredded
Mashed
Baked
Fried
etc...
Or just a nice fresh salad.
Pasta's are OK but the tend to make the chops seem blander than usual.

Apple Sauce (didn't you ever see that specific episode of the Brady Bunch?)...
I like to make Apple Crisp for dessert when I have pork chops if I don't serve applesauce with the meal.

Just made them last night and I served with Lipton's noodles and sauce butter herb flavor and corn. It was very good. Sometimes I don't have alot of time to cook everything homemade so, the packaged sides help out

I always make stuffing with dried bread cubes, poultry seasoning(dried sage, thyme and rosemary), grated celery and onion, chicken stock, salt and pepper. Make a brown gravy with the bits of flavor from the pork chops using flour, butter, chicken stock, a bit of milk and salt and pepper.
I have my homemade apple sauce with a touch of nutmeg, cinnamon and brown sugar.
I also like green beans with a can of chopped tomatoes.

STEWED APPLES
4-5 med. apples
1/2 tsp. cinnamon
1/4 tsp. ginger
1 tsp. vanilla
1/2 stick butter
1/4 orange peeling
1/4 tsp. nutmeg
Wash apples, core and quarter. Mix all ingredients. Pour over apples and coon on top of stove on low heat until done.
These sides are also good with pork chops:
Mashed Potatoes
Suffing or dressing
Sauteed Cabbage
Cooked Greens (turnip greens, mustard greens, collard greens - whatever type you like)
